EASY ELEGANT COTTAGE CHEESE AND PINEAPPLE SALAD

Easy Elegant Cottage Cheese and Pineapple Salad image

Individual servings of a very colorful starter or attractive salad on the side which can be made ahead of time. Super easy for a beginner cook and good for you too! Before you think, eeks, mayonnaise, give it a try, it works really well. Of course you could omit the mayonnaise if you prefer. When we were kids my mom used to make this for us for lunch or for salad at dinner and we all loved it! :)

Time 3h20m

Yield 1 salad, 4-6 serving(s)

Number Of Ingredients 4

1 (3 ounce) package island pineapple flavor Jello gelatin
1 cup boiling water
1 (8 ounce) can crushed pineapple in juice
1 cup small curd cottage cheese

Steps:

  • Pour the Jello mix into a heat proof bowl, about 4 cups in size. Carefully pour in the boiling water and stir until gelatin is dissolved. Refrigerate about 50 to 70 minutes. You want the gelatin to be liquid enough to easily stir things in thoroughly, but stiff enough to suspend things evenly without separating into layers.
  • When the gelatin is about the right consistency, stir in the cottage cheese and the pineapple with all of the juice. Stir until everything is evenly and thoroughly mixed together. Cover and chill until firm, about two hours.

Tips:

  • Use fresh pineapple for the best flavor. Fresh pineapple should have a sweet, fragrant smell and vibrant yellow color.
  • If you don't have fresh pineapple, you can use canned pineapple. Be sure to drain the pineapple well before adding it to the salad.
  • Use a good quality cottage cheese. Cottage cheese should be smooth and creamy, with no lumps.
  • Add some chopped nuts or seeds for a crunchy texture. Walnuts, pecans, and sunflower seeds are all good options.
  • For a sweeter salad, add some honey or maple syrup to taste.
  • Serve the salad immediately or chill it for later. The salad will keep in the refrigerator for up to 2 days.

Conclusion:

Pineapple cottage cheese salad is a refreshing and flavorful side dish or light lunch. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and delicious salad, give pineapple cottage cheese salad a try.
