I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

Tips:
- Use fresh pineapple. Fresh pineapple has a brighter flavor and more juice than canned pineapple.
- Grate the pineapple finely. This will help the pineapple distribute evenly throughout the cookies.
- Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool completely before storing them. This will help them keep their shape and flavor.
Conclusion:
Pineapple drop cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are soft and chewy, with a sweet and tangy flavor that is sure to please everyone. So next time you are looking for a sweet treat to make, give these pineapple drop cookies a try!
