Pineapple lime molded salad is a classic dish that is both refreshing and delicious. It is perfect for warm weather gatherings or potlucks and can be made ahead of time. This salad combines the tangy flavor of pineapple with the tartness of lime and the sweetness of sugar. It is typically made using a combination of crushed pineapple, lime juice, sugar, and gelatin, which are mixed together and then poured into a mold to set. The salad can be garnished with additional pineapple chunks, lime slices, or whipped cream.

PINEAPPLE-LIME MOLDED SALAD
This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

Steps:
- 1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
- 2. Note: though nowhere does it state, I make this in a 9x13 glass pan.
Tips:
- Select ripe pineapple: Use fresh, ripe pineapple for the best flavor and texture. Look for pineapples that are heavy for their size and have a slightly sweet smell.
- Use fresh lime juice: Fresh lime juice adds a bright, tangy flavor to the salad. If you don't have fresh limes, you can use bottled lime juice, but the flavor will not be as good.
- Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
- Serve with a variety of toppings: Pineapple lime molded salad can be served with a variety of toppings, such as fresh fruit, whipped cream, or nuts. Get creative and experiment with different toppings to find your favorite combination.
