1 3/4 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup coarsely chopped macadamia nuts
3/4 cup brown sugar, firmly packed
3 tablespoons soft butter or 3 tablespoons margarine
2 eggs
1 cup finely chopped fresh pineapple (packed firmly, with pineapple bits and juice)

Steps:

  • Sift together the first four ingredients.
  • Add nuts to the dry mixture.
  • Cream together sugar, butter and eggs until fluffy.
  • Stir in half the flour mixture.
  • Add pineapple.
  • Blend in the remaining flour mixture and pour onto a well greased 9x5x3 inch pan.
  • Combine 2 tbsp sugar and 1/2 tsp cinnamon and sprinkle on top of the bread mixture.
  • Bake at 350 degrees for one hour.

¾ cup brown sugar
3 tablespoons butter, softened
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon baking soda
1 (8.5 ounce) can crushed pineapple
¾ cup chopped pecans
½ cup raisins
2 tablespoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch loaf pan.
  • Beat brown sugar and butter with an electric mixer in a large bowl until light and fluffy. Add eggs one at a time, blending the first into the brown sugar mixture before adding the other.
  • Sift flour, baking powder, salt, and baking soda together in a separate bowl. Stir about half the flour mixture into the brown sugar mixture. Pour pineapple with its juice into the brown sugar mixture and stir; add remaining flour mixture and stir just until a batter forms. Fold pecans and raisins into the batter; pour into prepared loaf pan.
  • Mix white sugar and cinnamon together in a small bowl; sprinkle over the batter in the loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 c sugar
1 1/2 tsp cinnamon
3 c flour
1 tsp each - baking soda & salt
1 c chopped pecans or your favorite
3 eggs, beaten
1 1/4 c vegetable oil
2 c smashed banana
1 - 15 oz crushed pineapple - drained
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray two 9.5 x 5 bread pans with bakers joy or grease well. In a large bowl, whisk together the flour, sugar, salt, cinnamon, baking soda, salt and nuts.
  • 2. In another bowl, beat together the eggs, oil, vanilla, banana and pineapple. Make sure it's mixed well.
  • 3. Pour the wet ingredients into the dry and mix with a wooden spoon or spatula, only until you no longer see dry ingredients.
  • 4. Divide batter between two greased 9.5 x 5 bread pans. ( Can also make mini loaves of bread if desired.) I've done both. Baking time will vary, depending on size of pan.
  • 5. Bake for 50 minutes to 1 hour. Check center and pick should come out clean. Let cool for 5 minutes then remove from pans and finish cooling on racks.
  • 6. Enjoy! It's delicious! Freezes well too!

1 (1/8 ounce) sugar-free instant banana cream pudding mix
1 teaspoon baking powder

1 cup crushed pineapple with juice, undrained (8 ounce can)
1/4 cup fat free sour cream

  • Preheat oven to 375 degrees.

3 large eggs
1 c vegetable oil
2 tsp vanilla
1 tsp salt
1 tsp cinnamon
1 tsp baking powder

3 c grated zucchini
3 c flour

1 c chopped walnuts
TOPPING
3 tsp sugar
3 tsp cinnamon
1 c chopped walnuts

Steps:

  • 1. Mix the first eight (8) ingredients together. I use a stand mixer.
  • 2. Add in the zucchini, pineapple, flour and nuts. Mix well.
  • 3. Pour into bread pans prepared with cooking spray.
  • 4. Sprinkle topping over the batter. I tap it down a little so it doesn't all fall off when taken out of the pans.
  • 5. Bake at 350 for 50 minutes or until they test done with toothpick.
  • 6. Cool in pan about 10 minutes then turn out onto cooling rack.

I am posting this recipe for the Hawaii region of the world tour event. This is based on a recipe from "Best of the Best Hawaii Cookbook", that I changed for our tastes.

2 c flour
1 Tbsp baking powder
1/2 tsp salt
1/2te tsp cinnamon
1/4 tsp nutmeg
1/2 c vegetable oil
1/2 c sugar
1/4 c brown sugar, lightly packed
2 eggs
2/3 c milk
1 tsp vanilla extract
8 oz can of crushed pineapple, drained
1/2 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees. Lightly oil and flour one loaf pan.
  • 2. Sift flour, baking powder, salt, cinnamon and nutmeg onto wax paper. In a large bowl, beat oil with sugars; add eggs, one at a time; mix well.
  • 3. Add dry ingredients alternately with the milk. Stir in vanilla; add pineapple and pecans. Bake for 50 minutes. Cool completely before cutting.

Tips:

  • Use fresh pineapple. Fresh pineapple has a brighter flavor and more moisture than canned pineapple. If you're using canned pineapple, be sure to drain it well.
  • Toast the nuts. Toasting nuts enhances their flavor and gives them a nice crunch. You can toast nuts in a preheated oven at 350 degrees Fahrenheit for 5-10 minutes, or in a skillet over medium heat for 3-5 minutes.
  • Use a bundt pan. A bundt pan gives pineapple nut bread a beautiful shape and allows for even cooking. If you don't have a bundt pan, you can use a loaf pan, but the bread may not be as evenly cooked.
  • Don't overmix the batter. Overmixing the batter can make the bread tough. Mix the batter just until the ingredients are combined.
  • Bake the bread until a toothpick inserted into the center comes out clean. This usually takes about 60-70 minutes. If the toothpick comes out wet, bake the bread for an additional 5-10 minutes.
