GRANDMA T'S PINEAPPLE CREAM PIE

Grandma T's Pineapple Cream Pie image

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

Tips:

  • For the Perfect Crust: Use a combination of butter and shortening for a flaky, tender crust. Be sure to keep the butter and shortening cold until you work it into the flour. And don't overwork the dough, or it will become tough.
  • Achieving a Golden Crust: Before baking, brush the crust with a mixture of egg and milk to help it brown and give it a beautiful golden color.
  • Pineapple Filling: Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well before adding it to the filling.
  • Coconut Cream Filling: Use full-fat coconut milk for a rich and creamy filling. Be sure to chill the coconut cream mixture before pouring it over the pineapple filling. This will help it set and prevent it from becoming runny.
  • Baking: Bake the pie until the crust is golden brown and the filling is set. This will take about 45-50 minutes. You can check if the pie is done by inserting a toothpick into the center of the filling. If it comes out clean, the pie is done.
  • Chilling: Let the pie cool completely before serving. This will allow the filling to set and firm up. You can also chill the pie for several hours or overnight before serving for an even more delicious experience.

Conclusion:

Pineapple pie with coconut cream is a tropical delight that's perfect for any occasion. With its flaky, tender crust, sweet and tangy pineapple filling, and rich, creamy coconut cream filling, this pie is sure to be a hit. Follow these tips for success, and you'll have a perfect pineapple pie every time!
