A delicious, old recipe passed down from my Great-Grandmother. You will not be disappointed with the flavor. It's rich and creamy with a meringue top! Recipe may look complicated, but it's not -- much of the time spent is waiting for the filling to cool before assembling pie.

  • Reduce oven to 325 degrees.

  • Pile meringue on top of warm filling, making sure to spread it right to the edges. Bake at 325 degrees for 15-20 minutes, until golden. Cool at least one hour, then refrigerate.

Tips:

  • To make the perfect pie crust, use a combination of butter and shortening. This will create a flaky and tender crust.
  • Be sure to chill the pie dough before rolling it out. This will help to prevent the dough from shrinking in the oven.
  • When blind baking the pie crust, use pie weights or dried beans to weigh down the parchment paper. This will help to prevent the crust from bubbling up.
  • For the pineapple filling, use fresh pineapple if possible. Canned pineapple can also be used, but be sure to drain it well.
  • When making the meringue, be sure to beat the egg whites until they are stiff peaks. This will help to create a light and fluffy meringue.
  • When baking the pie, keep an eye on it so that the meringue does not overcook. The meringue should be golden brown and slightly firm to the touch.
