This recipe is still a family favorite as a side dish with pork and fresh vegetables. Add 1/2 cup of sugar or honey to turn it into a wonderful, old-fashioned dessert.

Tips:

  • Choose ripe pineapple: For the best flavor, use ripe, juicy pineapple. You can tell if a pineapple is ripe by its color. A ripe pineapple will have a deep golden-yellow color.
  • Use a sharp knife: When cutting the pineapple, use a sharp knife to make clean, even cuts. This will help prevent the pineapple from tearing or shredding.
  • Don't overmix the batter: When mixing the batter, be careful not to overmix it. Overmixing can make the bread tough. Mix the batter just until the ingredients are combined.
  • Bake the bread until it is golden brown: The bread is done baking when it is golden brown on top and a toothpick inserted into the center comes out clean.
