1 (10 ounce) jar maraschino cherries
3 cups all-purpose flour
2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
4 eggs
1 1/2 cups coarsely chopped walnuts
1 cup flaked coconut

Steps:

  • Drain cherries, reserving juice.
  • Coarsely chop cherries, set aside cherries and juice.
  • In a bowl, combine the dry ingredients.
  • In another bowl, beat eggs and cherry juice.
  • Stir into dry ingredients just unil combined.
  • Fold in walnuts, coconut and cherries.
  • Transfer to two greased 8x4x2 inch loaf pans.
  • Bake at 350° for 60-65 minutes or until a toothpick comes out clean.
  • Cool for 10 minutes before removing from pans.
  • Makes 2 loaves.
