Time 45m

Yield 12 cookies

Number Of Ingredients 5

1 cup crunchy peanut butter
3/4 cup packed brown sugar
1 large egg
1/2 cup semisweet chocolate chips
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicone mat.
  • With an electric mixer, beat together the peanut butter, brown sugar and egg until well combined. Stir in the chocolate chips with a wooden spoon.
  • Lightly wet your hands and form the mixture into 12 balls. Place the balls about 1 inch apart on the baking sheet. Lightly wet the tines of a fork and press a criss-cross pattern into the top of each cookie. Lightly sprinkle them with flaky sea salt.
  • Bake until just starting to brown, 12 to 15 minutes. Let sit for 5 minutes on the baking sheet, then remove to a rack to cool completely before eating.

Tips:

  • Use tart apples for the best flavor. Granny Smith or Honeycrisp are good choices.
  • Peel and core the apples before cooking them. This will make the applesauce smoother.
  • Cook the applesauce until it is thick and bubbly. This will help to prevent the cookies from spreading too much.
  • Let the applesauce cool completely before adding it to the cookie dough. This will help to prevent the cookies from becoming too soft.
  • Use a cookie scoop to drop the dough onto the prepared baking sheet. This will help to ensure that the cookies are uniform in size and shape.
  • Bake the cookies until they are golden brown around the edges. This will help to ensure that the cookies are cooked through.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
