1 (15-ounce) container whole milk ricotta
12 ounces mozzarella cheese, shredded
1/3 cup plus 2 tablespoons freshly grated Parmesan
4 ounces thinly sliced prosciutto, coarsely chopped
4 large egg yolks, beaten to blend
Pastry Dough, recipe follows
1 large egg, beaten to blend
3 1/2 cups all-purpose flour
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
1/4 cup cold solid vegetable shortening, cut into pieces
1 teaspoon salt
3 large eggs, beaten to blend
2 to 4 tablespoons ice water

Steps:

  • Position the rack on the bottom of the oven, and preheat the oven to 375 degrees F.
  • Heat 1 tablespoon of oil in a heavy large frying pan over medium heat. Add the sausages and saute until golden brown, breaking the sausage into pieces, about 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Transfer the mixture to a small bowl and set aside to cool.
  • Meanwhile, heat 1 tablespoon of oil in the same frying pan over medium heat. Add the spinach and cook until the spinach wilts and the juices evaporate, stirring often, about 10 minutes. Cool to room temperature. Squeeze the spinach to drain as much liquid as possible.
  • Into a large bowl, add egg yolks and beat lightly. Stir in the ricotta, mozzarella, and 1/3 cup of Parmesan cheese. Add the sausage, the spinach and prosciutto to the mixture and stir to combine.
  • Roll out larger piece of dough on a lightly floured work surface to a 17-inch round. Transfer the dough to a 9-inch springform pan. Trim the dough overhang to 1 inch. Spoon the ricotta mixture into the dough-lined pan. Roll out the remaining piece of dough into a 12-inch round. Place the dough over the filling. Pinch the edges of the doughs together to seal, then crimp the dough edges decoratively. Brush the beaten 1 large egg over the entire pastry top. Sprinkle the remaining 2 tablespoons Parmesan over the top. Bake on the bottom shelf until the crust is golden brown, about 1 hour.
  • Let stand 15 minutes. Release the pan sides and transfer the pizza to a platter. Cut into wedges and serve.
  • Blend the flour, the butter, the shortening and salt in a food processor until the mixture resembles coarse meal. Blend in the eggs. With the machine running, add the water 1 tablespoon at a time until the dough forms. Gather the dough into a ball. Divide the dough into 2 pieces, with 1 piece twice as large as the second piece. The light, flaky crust holds together an embarrassment of riches--sausage, smoked ham, salami, and pepperoni, plus ricotta, mozzarella, and Pecorino Romano cheeses. It's definitely not like pizza! Note: To be sure you have enough dough for the crust, you might want to double the dough recipe!

1 teaspoon kosher salt
½ cup very cold butter, cut into pieces
2 tablespoons olive oil
1 large egg, beaten
4 tablespoons cold water, or more as needed
1 (16 ounce) container ricotta cheese, drained
8 ounces low-moisture mozzarella cheese, cubed
2 ounces grated Pecorino Romano cheese
½ teaspoon kosher salt
1 teaspoon freshly ground black pepper

¾ pound cooked, crumbled Italian sausage

¼ pound salami, cubed

A deep-dish cousin to quiche that's packed with Italian deli meats and cheeses like prosciutto, pepperoni, soppressata, mozzarella and provolone, this rich pie, also called Easter pie, is traditionally made on Good Friday and served on the holiday to celebrate the end of Lent. This version came to The Times from Carlo's Bakery, in Hoboken, N.J., of "Cake Boss" fame, and it is the only savory item the bakery makes. It's typically eaten at room temperature, but the staff at Carlo's enjoys it warm right out of the oven.

1/4 teaspoon salt
1 pound chilled salted butter, cut into large pieces

Though many recipes for pizza rustica specify that the dried sausage, mozzarella and other filling ingredients be layered, in the Neapolitan version, they are diced and added to the ricotta filling, making the resulting pie easier to cut into wedges. 2 pounds bulk Italian sausage
5 large eggs, beaten
1 pound shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tablespoon finely chopped parsley

freshly cracked black pepper to taste
2 pounds prepared pizza dough
1 egg
2 tablespoons water

Steps:

  • Place a piece of cheesecloth into a strainer, and place the ricotta cheese into the cheesecloth. Set a bowl underneath the strainer to catch drips, and refrigerate 8 hours, or overnight, to allow moisture to drip from ricotta.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sausage into a large skillet over medium heat, and cook and stir until browned and crumbly, about 10 minutes. Drain excess grease, and allow sausage to cool.
  • Place the drained ricotta cheese into a large bowl, and stir in 5 beaten eggs and mozzarella cheese until well mixed. Mix in the cooked sausage, Parmesan cheese, parsley, prosciutto, and black pepper until thoroughly combined.
  • Divide the pizza dough into fourths, and roll out 2 of the pieces into 12-inch circles. Fit the circles into 2 10-inch pie plates, leaving 1 inch of dough hanging over the edge. Divide the filling between the 2 pies. Roll out 2 top crusts, place onto the pies, and fold the edges of the bottom crusts over the edges of the top crusts to seal. Crimp and flute the edges of the pie crusts.
  • Beat 1 egg with water in a small bowl, and brush the egg wash over the tops and edges of both pies. Cut several slits into the top crusts to vent steam.
  • Bake pies in the preheated oven for 15 minutes, then lower oven temperature to 325 degrees F (165 degrees C). Continue to bake until the crust is browned and the filling is hot, 45 to 50 more minutes. Serve at room temperature.

6 tablespoons cold unsalted butter, cut into 1/2 inch pieces
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 to 5 tablespoons ice water
For the filling:
1 cup ricotta (preferably fresh or homemade ; 8 ounces)
2 large eggs, lightly beaten
3 tablespoons grated Pecorino Romano
2/3 cup coarsely grated aged provolone
3 ounces thinly sliced Italian deli meats such as soppressata, prosciutto, capicolla ham, and salami, finely chopped
3 tablespoons chopped flat-leaf parsley
Freshly ground black pepper

1 (9-inch) tart pan with a removable bottom
pie weights or dried beans

Steps:

  • Make the dough:
  • Blend together flour, butter, salt, and pepper in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle 3 tablespoons ice water evenly over mixture and gently stir with a fork (or pulse) until incorporated.

Fold overhang inward and press against side of pan to reinforce edge. Prick dough in pan all over with a fork. Chill pan until dough is firm, about 15 to 30 minutes.
  • Line shell with foil and fill with pie weights. Bake until edges are pale golden, 18 to 25 minutes. Carefully remove foil and weights and bake until shell is golden all over, about 10 to 15 minutes more. Cool completely in pan, about 20 minutes.

  • Reduce oven temperature to 350°F. Stir together ricotta, eggs, Pecorino, provolone, meats, parsley, and 1/4 teaspoon pepper. Spread filling evenly in baked shell.

After 5 to6 layers, pour half of the egg mixture over the filling, allowing it to seep down. Continue layering the meats and cheeses, then pour the remainder of the egg mixture evenly over the top. You should have enough for 10 to12 layers.

Steps:

  • Preheat oven to 425°; defrost spinach in the microwave, 6 minutes on high; wring spinach dry in a clean kitchen towel.
  • Split bread lengthwise and hollow it out; cut in half crosswise, making 4 shells for pizzas.

1 pastry for double-crust pie, 10 inch (or you can make the "yeast dough pie crust ")
3 1/4 cups flour
1 1/2 tablespoons leaf lard or 1 1/2 tablespoons butter
1/8 teaspoon salt
1/8 teaspoon pepper
1 (1/4 ounce) envelope yeast
1 cup water
PIE FILLING:
2 pounds sweet Italian sausage links
1/4 pound prosciutto, chopped
1/2 pound cooked ham, diced
2 pounds ricotta cheese
12 ounces mozzarella cheese, diced
5 eggs
1 tablespoon chopped fresh Italian parsley (flat leaf)
1/4 cup freshly grated romano cheese or 1/4 cup parmesan cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Make the yeast dough crust: In a cup, mix yeast and warm water together. Place flour on a pastry board, add leaf lard (or butter), salt, pepper and yeast/water mixture. Work together well until dough forms, continue working the dough until it is elastic and smooth. Place dough in a deep dish, cover and allow it to rise in a warm place for 2 hours, or until doubled in volume. When dough has risen, cut into 2 pieces. Stretch one piece to fit into a greased 9 x 2 1/2-inch round cake pan. Preheat oven to 375°F. Prepare filling as described below. After filling the dough lined pan, stretch second piece of dough and place over the filling, pressing the edges closed. If there is a lot of excess dough left on the edge, carefully trim some, but leave enough to flute the sealed edge. (I like to brush the crust with a bit of beaten egg before baking, to give it a gloss.) If you use a regular pie crust dough: Preheat oven to 400°F. Prepare pastry and line a 10 inch pie pan. Prick dough with a fork, and sprinkle with a bit of flour. Prepare filling as described below. Pour mixture into pastry lined pie tin and cover with top crust. Leave about a 1/2 to 3/4-inch overhang. Fold dough under and back, and flute edge. Cut slits in top crust to allow steam to escape. Making the Filling: Cut sausage into small pieces (or remove from casings and crumble), place in frying pan and brown lightly in 2 tablespoons of water. In a large bowl, combine ricotta, mozzarella, salt and pepper; add eggs one at a time, beating with a wooden spoon after each addition. Add cooked sausage, prosciutto, ham, parsley and grated cheese to ricotta mixture. Blend well. Fill dough lined pan with mixture. For Regular Pie Crust: Bake the pie for 15 minutes in preheated (400°) oven, lower oven temperature to 325°F and continue baking for 45-50 minutes more. For Yeast Dough Crust: Bake the pie in a preheated 375°F oven for 45-50 minutes. Remove from oven and let pie "settle" for about 10 minutes before slicing if you are going to serve it warm; otherwise let pie cool and refrigerate when cooled. Pie can be served either warm or cold. Slices can be reheated in the microwave. **Please note the different pan sizes, pan preparations, baking temperatures and baking times depending on which type of crust you choose to use. The "Prep Time" does not include the 2 hour rising time for the yeast dough crust.

2 cups all purpose flour
1/2 cup sugar
1 teaspoon salt
1 1/4 teaspoons ground black pepper
6 egg yolks
1/4 cup cold water
1/4 pound sweet butter
1 pound fresh sheep milk ricotta cheese
1/4 pound prosciutto, sliced, coarsely chopped
1/2 pound genoa salami, sliced, chopped
1/2 pound fresh mozzarella, diced, 1/4-inch pieces
1/4 cup grated pecorino romano cheese
Olive oil
10-inch springform pan

Steps:

  • Preheat oven to 375 degrees. In a food processor combine the flour, sugar, salt, 1/4 teaspoon black pepper, 3 egg yolks, cold water and butter and process until a ball of dough has been formed. Remove the dough and, on a floured work surface, knead the dough for 5 minutes. Wrap the ball of dough with plastic and refrigerate. In a bowl combine the ricotta, 3 remaining egg yolks, 1 teaspoon black pepper, prosciutto, salami, mozzarella and romano cheese into a batter. Refrigerate while you prepare the pastry shell. Remove the dough from the refrigerator and cut one third of the dough off to be used as the top crust. With the remaining larger piece, flour a work surface, place this larger piece of dough on the work board and begin to roll the dough to approximately a 12-inch wide circle. Brush the inside of the springform pan with olive oil and transfer the rolled out circle of dough to the pan. Using your finger tips, press the dough evenly into the bottom of the pan, making sure that the dough has a flat bottom and the edge is tucked into the seam of the pan. Pull the dough up the side of the pan to the top edge and the dough should just rise to the top of the pan. Pour the cheese and meat filling into the prepared dough and shake the pan to distribute the filling evenly. Roll the remaining smaller piece of dough to a 10-inch circle and place this on top of the pan. Pinch the edges of the two pieces of dough together to seal the edge completely. Cut a cross into the top crust so that steam may escape during baking and place into the preheated oven, on a cookie sheet, in the center of the oven, and bake for 45 to 55 minutes. The top should be well browned when thoroughly baked. Remove from the oven, allow to cool for 10 minutes, run a sharp knife around the edge to loosen the crust from the pan, and open the springform pan. continue to cool completely before serving at room temperature.;

2 pounds Swiss chard, washed well, stems removed and sliced thin, and leaves chopped separately
2 tablespoons olive oil
4 large eggs, beaten lightly
a 15- to 16-ounce container whole-milk ricotta cheese
4 large red bell peppers (about 1 1/2 pounds), roasted and chopped
2 garlic cloves, minced and mashed to a paste with 1 teaspoon coarse salt
1 recipe pizza rustica pastry dough
1/4 pound Parmesan cheese, grated (about 1 cup)
1/2 pound thinly sliced prosciutto, chopped
6 ounces provolone cheese, cut into 1/4 inch dice (about 1 cup)
an egg wash made by beating 1 large egg with 2 tablespoons milk
PIZZA RUSTICA PASTRY DOUGH
4 cups all-purpose flour
2 teaspoons sugar
1 teaspoon salt
2 sticks (1 cup) cold unsalted butter, cut into bits
4 large eggs, beaten lightly

Steps:

  • Make Pizza Rustica:
  • In a large heavy saucepan cook chard stems in oil over moderately low heat, stirring occasionally, until crisp-tender, about 3 minutes. Add chard leaves with water clinging to them and cook, covered, over moderate heat, stirring occasionally, until stems are tender, about 8 minutes. Drain chard well in a colander and squeeze out as much moisture as possible.
  • In a large bowl combine well eggs and ricotta. In a bowl combine well roasted peppers and garlic paste.
  • Preheat oven to 375°F.
  • On a lightly floured surface roll out two thirds pastry dough 1/8 thick into a round about 18 inches in diameter. Fit dough into a 9-inch springform pan and trim edge, leaving a 2-inch overhang. Into shell layer evenly half chard, half ricotta mixture, all roasted pepper mixture, half Parmesan, all prosciutto, remaining ricotta mixture, remaining chard,and remaining Parmesan.
  • On a lightly floured surface roll out remaining dough 1/8 inch thick into a round about 11 inches in diameter. Brush edge of shell in pan with some egg wash and fit dough on top of filling. Trim top crust even with bottom crust and crimp edges together decoratively. Cut four 3-inch-long vents in top crust and brush top crust with some remaining egg wash.
  • Bake pizza rustica in middle of oven 1 1/2 hours, or until top crust is deep golden, and cool completely in pan on a rack. Pizza rustica may be made 2 days ahead and chilled in pan, covered.
  • Serve pizza rustica warm or at room temperature, cut into wedges.
  • To Roast Peppers:
  • Using a long-handled fork, char peppers over an open flame or on a rack set over an electric burner, turning them, until skins are blackened, 4 to 6 minutes. (Or broil peppers on rack of a broiler pan under a preheated broiler about 2 inches from heat, turning them every 5 minutes, 15 to 20 minutes, or until skins are blistered and charred.) Transfer peppers to a bowl and let stand, covered, until cool enough to handle. Keeping peppers whole, peel them, starting at blossom end. Cut off pepper tops and discard seeds and ribs. Roast peppers can be prepared in 45 minutes or less.
  • To make Pastry Dough:
  • In a bowl with a pastry blender or in a food processor mix or pulse together flour, sugar, and salt. Add butter and blend or pulse until mixture resembles coarse meal. Add eggs and toss or pulse until eggs are incorporated and a dough is formed. Form dough into a disk and chill, wrapped in wax paper, 1 hour. Dough may be made 1 day ahead and chilled, covered.) Can be prepared in 45 minutes or less but requires additional unattended time.

3 large eggs
1 pounds part-skim ricotta cheese
4 ounces shredded mozzarella cheese

1/4 pound Genoa salami, cut into 1/2" cubes (about 1 cup)

  • Make crusts according to recipe. Form in to two balls, one slightly larger than the other. This will be used for the bottom crust. Set aside. Stir together the eggs, ricotta, mozzarella, Locatelli, salt, and pepper. Stir in the salami, and pepperoni. Preheat oven to 350°F. Roll out the bigger ball and line the bottom of the buttered tart pan. Trim crust evenly. Place the prosciutto slices on top of the crust. Put filling into crust. Roll out the other ball. Make 10, 1" wide thick fluted strips about 10" long. Create basket weave on top of filling and tuck ends of strips into rolled up bottom crust. Brush top with milk and bake for 1 hour.
