FRIED MUSHROOMS
At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

QUICK PAN-COOKED MUSHROOMS
I serve these with chicken, fish, and pasta. I've made the dish with mushrooms that had seen better days and I've made it with nice fresh ones. The latter was prettier and the mushrooms juicier, but it's delicious even if the mushrooms aren't at their freshest.

Steps:
- Trim off the ends of the mushrooms and cut in thick slices. Heat a large, heavy frying pan over medium-high heat and add 1 tablespoon of the olive oil. When the oil is hot (you can feel the heat when you hold your hand above the pan), add the mushrooms and cook, stirring or tossing in the pan, for a few minutes, until they begin to soften and sweat. Add the remaining oil, turn the heat to medium, and add the shallots, garlic, and herbs. Stir together, add 1/2 teaspoon salt and freshly ground pepper to taste, and cook, stirring often, for another 1 to 2 minutes, until the shallots and garlic have softened and the mixture is fragrant. Add the wine and cook, stirring often and scraping the bottom of the pan, until the wine has evaporated. Taste and adjust seasonings. Remove from the heat and serve.

FRIED MUSHROOMS WITH DIPPING SAUCE
Mushrooms are one of my favorites. I had this dish as an appetizer at a restaurant and couldn't believe how simple, delicious, and easy to make it was. I used the same concept as Shake'n Bake® to make this dish, but instead of baking, I fried them. It can either be served as an appetizer or even side dish and whenever I make it for my friends, they can't seem to get enough!

Tips:
- Choose the right mushrooms. For this recipe, it is best to use a firm mushroom with a mild flavor, such as white button mushrooms, cremini mushrooms, or oyster mushrooms.
- Slice the mushrooms evenly. This will help them cook evenly.
- Use a well-seasoned pan. A cast iron skillet or a stainless steel pan that has been seasoned with oil is ideal.
- Don't overcrowd the pan. If you overcrowd the pan, the mushrooms will steam instead of fry.
- Cook the mushrooms in batches. If you are cooking a large batch of mushrooms, cook them in batches so that they have enough room to brown.
- Season the mushrooms to taste. You can season the mushrooms with salt, pepper, garlic powder, onion powder, or any other desired seasonings.
- Serve the mushrooms immediately. Fried mushrooms are best served immediately after cooking, while they are still hot and crispy.
Conclusion:
Plain fried mushrooms are a simple but delicious dish that can be enjoyed as a snack, an appetizer, or a side dish. They are easy to make and can be customized to your own taste. With just a few simple ingredients and a few minutes of cooking time, you can have a delicious and satisfying dish that the whole family will enjoy.
