Really good and healthy. Keep in mind that Poblano peppers are not spicy, so add your own spice if that's what you're after (I add my favorite hot sauce to the finished product, Jalapeno Tabasco). From Cooking Light.

Tips:

  • Choose ripe mangoes: Using ripe mangoes will ensure that your quesadillas are sweet and flavorful. Look for mangoes that are deep yellow or orange in color and have a slight give when you press them gently.
  • Don't overcrowd the pan: When cooking the quesadillas, be sure to not overcrowd the pan. This will help them cook evenly and prevent them from becoming soggy.
  • Use a sharp knife: When cutting the mangoes and poblanos, be sure to use a sharp knife. This will help you get clean, even cuts and prevent the vegetables from becoming bruised.
  • Serve with your favorite toppings: Once the quesadillas are cooked, you can serve them with your favorite toppings. Some popular options include guacamole, salsa, sour cream, and shredded cheese.
