We made this soup last night, had some fresh cabbage from our CSA. It was very tasty. My husband loved kielbasa, no matter how it is fixed. Throw a little hot sauce in, YUMMY.

1 lb polish kielbasa, sliced in 1/4 in rounds
2 c onions, sliced thinly
4 c green cabbage, shredded
1 Tbsp fresh garlic, minced
6 c vegetable stock
2 c potatoes, peeled and diced
1 tsp salt
1/2 tsp pepper

Steps:

  • 1. Saute kielbasa in a large soup potover medium heat for 5 minutes. Remove kielbasa and set aside. Add onion and cabbage and saute for 10 minutes, stirring occasionally. Add garlic and saute for 2 minutes, stirring concstantly. Add vegetable stock, potatoes, salt and pepper. Bring to a boil and simmer for 20 minutes.

2 teaspoons caraway seeds, crushed

4 cups chicken broth (low-sodium is ok)

Steps:

  • Add first 5 ingredients to a 4-quart slow-cooker.
  • Pour broth over all.
  • Cover and cook on LOW for 8-10-12 hours.

2 Tbsp butter
1/4 c onion, finely chopped
1/4 c celery, finely chopped
5 potatoes, cut up
1/2 lb polish sausage, browned & sliced
20 oz chicken broth
4 c cabbage, shredded
11/2 pkg peas, frozen
1 tsp seasoned salt
1/8 tsp thyme
1/8 tsp marjoram

Steps:

  • 1. Melt butter in large saucepan; Add chopped onion and celery and sliced sausage.
  • 2. Cook and stir until vegetables are limp and clean and sausage is beginning to brown.
  • 3. Add chicken stock and cabbage and bring to a boil; Reduce heat to simmer and cook for 5 minutes.
  • 4. Taste for seasoning and add salt and pepper as needed - Don't over cook.

1 lg head of cabbage, shredded
1/2 cup white vinegar
2 tsp salt
2 tbsp brown sugar
