Time 40m

Number Of Ingredients 17

1-2 teaspoons olive oil
6 ounces turkey bacon (diced)
8 ounces sliced mushrooms
1/4 teaspoon salt
1 ½ pounds lean ground beef or ground turkey
1 medium red or yellow onion (chopped)
2 cloves garlic (finely minced)
1/2 teaspoon salt
1/2 teaspoon pepper
¼ cup flour
2 tablespoons tomato paste
1 cup low-sodium beef broth
1 tablespoon Worcestershire Sauce
½ teaspoon paprika
1 cup sour cream (light or regular)
1/4 cup chopped fresh parsley or 1 tablespoon dried
Cooked egg noodles or rice (for serving)

Steps:

  • In a 12-inch nonstick skillet, heat 1-2 teaspoons olive oil and saute diced bacon over medium heat until crispy. Transfer bacon to a paper-towel lined plate and set aside, leaving any grease/oil in the pan. Add sliced mushrooms to the skillet and cook, stirring occasionally, for about one minute (if the pan is too dry, add a teaspoon of oil as needed). Add salt. Continue cooking until the mushrooms are softened and have given up most of their juices. Transfer them to the same plate as the bacon.
  • In the same skillet, brown the ground beef or turkey with the onion, garlic, salt and pepper. Cook until the meat is no longer pink. Drain the grease.
  • Stir in the flour and tomato paste to the meat mixture and mix to combine well. Cook over medium heat, stirring often, for 1 minute. Add the beef broth and bring the mixture to a simmer, whisking to combine all the ingredients. Simmer vigorously for 3-5 minutes until the mixture is slightly reduced and thickened. Stir in the Worcestershire sauce and paprika. Cook until flavors blend, about 5 minutes on medium heat. Add sautéed mushrooms and bacon back to the skillet. Remove the skillet from the heat and stir in the sour cream, mixing well to avoid lumps. Stir in the parsley. Serve over egg noodles or hot, cooked rice.

POORMAN'S STROGANOFF

One of those recipes that you usually have the ingredients on hand. Very good for drop in company prepared to serve with a salad and crusty bread. I noticed you only had one recipe of this title. This recipe calls for more ingredients than that one. A friend gave me this recipe in 1987. He stated that the first time he entertained the woman who would become his wife, this is what he prepared. Romantic!

Time 35m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb hamburger
1 dash garlic salt
8 ounces egg noodles
2 (12 ounce) cans tomato juice
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a 10-inch skillet with lid, brown hamburger and add garlic salt.
  • Poor noodles on top. Do not mix.
  • Mix sauce and tomato juice; pour over noodles.
  • Cover and simmer until noodles are soft, about 30 minutes.
  • After noodles are soft, stir and remove from heat.
  • Serve hot.

Tips:

  • Use a good quality beef broth. This will make a big difference in the flavor of your stroganoff. If you don't have any beef broth on hand, you can use chicken broth instead. Just add a little bit of Worcestershire sauce to give it a beefy flavor.
  • Don't overcook the beef. You want the beef to be tender, but not tough. Cook it over medium heat until it is just cooked through.
  • Use fresh mushrooms. Fresh mushrooms will give your stroganoff a much better flavor than canned mushrooms. If you can't find fresh mushrooms, you can use frozen mushrooms instead.
  • Add a dollop of sour cream at the end. This will give your stroganoff a creamy and tangy flavor. You can also use yogurt or crème fraîche instead of sour cream.
  • Serve over mashed potatoes, egg noodles, or rice. Stroganoff is a versatile dish that can be served over a variety of different sides.
