15 ounces light kidney beans (drained and rinsed)
15 ounces garbanzo beans (drained and rinsed)

  • Add remaining ingredients and let cook on medium low for 1 hour.

Tips:

  • Use dried beans: Dried beans are more economical than canned beans, and they also have a better flavor and texture. Just be sure to soak them overnight before cooking.
  • Use leftover pasta: This is a great way to use up leftover pasta, and it also adds a lot of flavor and texture to the soup.
  • Add vegetables: Vegetables add flavor, nutrition, and color to the soup. Some good options include carrots, celery, onions, bell peppers, and spinach.
  • Use a flavorful broth: The broth is the base of the soup, so it's important to use a flavorful one. You can use chicken broth, vegetable broth, or beef broth. You can also use a combination of broths.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of red pepper flakes for a little heat.

Conclusion:

Pasta fagioli is a delicious and hearty soup that is perfect for a cold winter day. It's also a very economical soup to make, especially if you use dried beans and leftover pasta. So next time you're looking for a quick and easy meal, give pasta fagioli a try. You won't be disappointed!
