Ditch the deep-fryer in favor of this recipe for extra-crispy Baked Popcorn Chicken dunked in a quick-fix honey-garlic glaze.

Cooking spray
1 pound boneless, skinless chicken thighs
1 teaspoon kosher salt
3/4 cups all-purpose flour
3 large eggs
2 1/2 cups Panko breadcrumbs
1 Tablespoon olive oil
1 Tablespoon minced garlic
1/4 teaspoon crushed red pepper flakes (optional)
1/3 cup honey
2 Tablespoons apple cider vinegar
1/3 cup chicken broth
2 teaspoons cornstarch

Steps:

  • Preheat the oven to 450°F. Line a baking sheet with foil and grease it generously with cooking spray.
  • Trim any fat from the chicken thighs and cut them into 1/2-inch pieces.
  • Add the flour and salt to a sealable plastic bag. Add the chicken to the bag, press out any air then seal the bag shut. Shake the bag until the chicken pieces are coated on all sides.
  • In a shallow dish, whisk together the eggs.
  • Add the breadcrumbs to a second shallow dish.
  • Remove each piece of chicken from the bag and shake off any excess flour. Dip the chicken in the eggs, shake off any excess, then dip it in the breadcrumbs, pressing to coat the chicken on all sides. Repeat the coating process with all of the chicken pieces, arranging them in a single layer on the prepared baking sheet.
  • Spray the chicken pieces with cooking spray then bake them for 8 minutes. Flip each chicken piece once then continue baking until cooked through and crispy, an additional 5 to 10 minutes. While the chicken is baking, make the sauce.
  • Add the olive oil to a small saucepan set over medium-low heat.
  • Add the minced garlic and cook, stirring frequently, until golden brown and fragrant, about 2 minutes. Add the crushed red pepper flakes (optional) and cook and additional 30 seconds.
  • Add the honey and apple cider vinegar, whisking to combine.
  • In a small bowl, whisk together the chicken broth and cornstarch.
  • Increase the heat to medium-high and whisk in the brother mixture. Bring the mixture to a boil until it thickens slightly, about 3 minutes. Transfer it to a serving bowl.
  • Remove the popcorn chicken from the oven and serve it with the sauce for dipping.
  • If you prefer to toss the popcorn chicken with the sauce, rather than use the sauce as a dip, you can double the sauce recipe but use only 1 tablespoon cornstarch.

2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
1 cup (125g) all-purpose flour (spoon & leveled)
5 cups (140g) corn flakes cereal, crushed lightly
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
2 large eggs
1/4 cup (60ml) milk
3/4 cup (222g) your favorite BBQ sauce (I like Sweet Baby Rays Original)
1/4 cup (80g) honey
1/4 cup (68g) ketchup

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Place the bite-sized pieces of chicken in a large bowl. Add flour and stir to coat each piece. Set aside.
  • Place the corn flakes, salt, pepper, garlic powder, and smoked paprika into a large bowl. Set aside. Whisk the eggs and milk together in a small bowl.
  • This next step gets your hands a little messy so have paper towels nearby. Dip each piece of chicken in the egg mixture, letting any excess drip off. Then generously roll in the cornflake mixture, shaking off any excess. Place onto the prepared baking sheet. Repeat with all chicken bites.
  • Bake for 18 minutes, flipping once at the 9-10 minute mark. (During this time, I make the sauce in step 6.) Remove from the oven and allow to cool for 5 minutes.
  • Heat the sauce ingredients in a small saucepan over medium heat for 6-7 minutes, whisking occasionally.
  • Carefully place the chicken bites into a large bowl. Pour the warm honey BBQ sauce on top and gently stir to coat. Serve warm. Leftovers keep well in the refrigerator for up to 1 week. Reheat in the microwave until warmed through.

4 cups fresh broccoli florets

2 tablespoons flour

1-2 teaspoons cayenne pepper, to taste

Steps:

2 large eggs
1/2 cup milk
1 1/2 cups flour
1 cup panko bread crumbs
1/2 teaspoon salt

1/4 teaspoon cayenne pepper

Canola oil for frying
HONEY DILL SAUCE:
1/2 cup mayonnaise
2 tablespoons honey
1 1/2 tablespoons fresh or frozen dill, finely chopped

Steps:

  • Popcorn Chicken: Cut chicken breasts into 1 inch pieces. Set aside. In a small bowl, whisk together eggs and milk. In a medium bowl, combine flour, panko crumbs and all the spices. Mix until well combined. Dip the chicken pieces into the egg mixture and then transfer the chicken from the egg mixture into the flour mixture and toss until completely coated with seasoned flour. Remove the chicken from the flour mixture and set on a baking sheet or plate and continue until all the chicken pieces are coated. Pour oil into a medium-sized, high sided pot. Oil should be no more than 2 inches deep and not more than halfway up the side of the pot. Heat oil to 375°F. Test your oil temperature with one of the chicken pieces. If it browns too quickly, turn the heat down and wait a minute or two to start frying. Carefully drop the chicken pieces, 8 to 12 pieces at a time, into the hot oil and fry for 3 to 4 minutes until browned and cooked through. Use a slotted spoon to remove the chicken pieces from the hot oil and place the chicken on a paper towel to drain. Continue frying the rest of the chicken. Can be made ahead and frozen. Freeze in a single layer for 1 to 2 hours, then place in a freezer-safe plastic bag. Reheat in a single layer on a baking sheet at 350°F for 15 to 20 minutes, stirring once or twice, until heated through. Honey Dill Sauce: Mix all ingredients in a small bowl and refrigerate until ready to use. Honey dill sauce will keep in the refrigerator, in a sealed container, for up to 3 weeks.
