A yummy, creamy chicken casserole which can turn into an elegant dish when the chicken breasts are left whole. For a variation, use boneless chicken breasts, but do not dice them. Pour the soup mixture over all, but sprinkle the cracker and seed combination over the breasts only and bake as usual.

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 7

1 (10 ounce) can cream of chicken soup
1 (10 ounce) can cream of celery soup
1 cup sour cream
4 -5 dozen round buttery crackers, crushed
1/2 cup butter, melted
1 tablespoon poppy seed
5 chicken breasts, cooked and shredded

Steps:

  • Mix together soups and sour cream.
  • Set aside.
  • In a separate bowl, combine crackers, butter and poppyseeds.
  • Layer chicken, soup mixture and crackers in an ungreased 9x13 inch baking pan.
  • Bake at 350 degrees for 30 minutes.

Tips:

  • Choose the right chicken: For this recipe, boneless, skinless chicken breasts or thighs work best. Chicken breasts will cook a little faster than thighs, so adjust the cooking time accordingly.
  • Make sure the chicken is evenly coated in flour: This will help the chicken to brown nicely and prevent it from sticking to the pan.
  • Don't overcrowd the pan: If you're cooking a lot of chicken, cook it in batches so that the chicken has enough room to brown.
  • Cook the chicken until it is cooked through: The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: This will help the chicken to retain its juices and stay moist.
  • Serve the chicken with your favorite sides: Poppy seed chicken goes well with a variety of sides, such as mashed potatoes, rice, or roasted vegetables.

Conclusion:

Poppy seed chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is coated in a flavorful mixture of poppy seeds, bread crumbs, and Parmesan cheese, then baked until golden brown. Serve it with your favorite sides for a complete meal.
