Pork carnitas with green chiles is a classic Mexican dish that is simple to make and packed with flavor. The key to this recipe is using pork shoulder, also known as pork butt, which is a fatty and flavorful cut of meat that becomes tender and juicy when slow-cooked. The pork is marinated in a blend of spices, including cumin, oregano, and chili powder, then braised in a combination of chicken broth and green chiles. The result is a tender and flavorful pork that can be served on its own or used as a filling for tacos, burritos, or enchiladas.

PORK GREEN CHILE

Pork Green Chile image

A simple and, in my opinion, authentic version, this recipe comes down at least 3 or 4 generations of my family. You will know it's done when the sauce has a medium thickness. Remember, the longer it cooks, the better it will taste. You can serve smothered over burritos or with warm tortillas, beans and/or fried potatoes. Also delicious with fried eggs (Huevos rancheros). Substitute 4 or 5 chopped roasted chiles for green chiles and jalapenos if you prefer.

Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is the best cut for carnitas because it has a good amount of fat that helps keep the meat moist and flavorful during the cooking process.
  • Use a Dutch oven or slow cooker: These cooking methods allow the pork to cook slowly and evenly, resulting in tender and juicy carnitas.
  • Add plenty of flavorings: The combination of spices, herbs, and citrus fruits in the recipe provides a complex and delicious flavor profile. Don't be afraid to experiment with different combinations to find your favorite.
  • Cook the pork until it is fall-apart tender: This will ensure that the carnitas are easy to shred and have a melt-in-your-mouth texture.
  • Serve the carnitas with your favorite toppings: There are endless possibilities when it comes to toppings for carnitas, such as shredded cabbage, salsa, guacamole, sour cream, and cheese. Get creative and make a taco, burrito, or bowl that is uniquely yours.

Conclusion:

Pork carnitas with green chiles is a delicious and versatile dish that can be enjoyed in many different ways. Whether you are making tacos, burritos, or simply serving the carnitas with rice and beans, this recipe is sure to be a hit. So next time you are looking for a flavorful and easy-to-make Mexican dish, give pork carnitas with green chiles a try.
