2 tablespoons cooking oil
4 (6 ounce) pork chops
1 (1 ounce) package dry onion soup mix
3 cups water
1 cup uncooked white rice

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Heat the oil in a large skillet over medium heat; brown the pork chops on both sides. Remove the pork chops from the skillet, reserving the drippings in the skillet; add the onion soup mix and the water to the drippings; cook and stir until hot.
  • Spread the rice evenly into the bottom of a 2 quart casserole dish. Lay the pork chops atop the rice. Pour the mixture from the skillet over the pork chops and rice; cover.
  • Place covered dish in preheated oven and bake 45 minutes. Remove cover and bake until the pork is no longer pink in the center, another 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

6 tablespoons butter
6 center-cut pork chops
8 ounces frozen broccoli cuts
4 cups white rice
8 ounces fresh white mushrooms
1/2 sweet onion
24 ounces cream of mushroom soup

Steps:

  • Preheat oven to 375 degrees. Place chops in baking pan w/ 1/2 cup of water.Season chops to your liking.
  • Let pork chops bake for 30 minute Then pour 24 oz cream of mushrooms on chops.
  • While chops are baking, boil 4 cups of rice for 20 minute Sautue 8 oz of mushrooms w/ 1/2 of a sweet onion in 6 Tbs of butter.
  • Boil 8 oz of broccoli cuts for 5 minutes Then remove chops from the oven/.
  • Pour excess cream of mushroom on rice, then mix sauted mushrooms, onion, broccoli with rice.

1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.

2 tablespoons vegetable or peanut oil
1/2 pound ground pork
1 teaspoon kosher salt
1/2 teaspoon minced fresh ginger
2 cloves garlic, minced
2 scallions, chopped
1 lightly packed cup bean sprouts
1 cup frozen peas, thawed
1 1/2 cups day old Right Rice, recipe follows
2 teaspoons soy sauce, plus more to taste
1 tablespoon chili sauce (recommended: Sriracha)
2 eggs, beaten
1 1/2 cups Carolina rice
Water, for rinsing and cooking

Steps:

  • In a large nonstick saute pan or wok, heat the oil over high heat. When the oil begins to swirl, add the ground pork, salt and ginger. Break the pork up with a spoon and stir while browning. When the pork is cooked through and golden, add the garlic, scallions, bean sprouts and peas. Stir and cook for a minute or so more, then push it to the side and add a bit more oil, if needed. Add the rice and quickly stir to heat and toast the rice. Once a crust has formed on some of the rice, add the soy sauce and chili sauce. Season with more salt, if needed. Incorporate the rice with the rest of the ingredients in the pan. Once combined, push to the sides and add the eggs to the center, allowing the eggs to curdle lightly. Rapidly stir the rice in to coat while the eggs are cooking. The eggs act as glue instead of being left as big curds separated from the rice. Transfer to a serving bowl and serve immediately.
  • Rinse the rice 3 times to remove the starch. Put the rice in a medium saucepan. Fill the saucepan with enough water to cover the rice by 1/2-inch. Or measure by putting your thumb tip on the rice and filling the pot with water until the water reaches the middle of your thumbnail. Bring the rice to a simmer over low heat, then cover and cook until tender and liquid is evaporated, about 15 minutes. Remove from heat and let the rice stand another 5 minutes, covered.
