4 cups cauliflower florets
4 (4 ounce) pork chops, trimmed
1 ½ teaspoons curry powder

PORK CHOPS AND SPANISH RICE

Pork Chops and Spanish Rice image

This is one of the first recipes I ever served to guests. That was 30 years ago and I still make it today! This is the recipe as it was written, however sometimes I add a combo of red and green peppers, use V-8 juice instead of tomato, and add 1/4 teaspoon of garlic powder. You can also heat it up by adding a little hot sauce, or a little chopped hot pepper, or by making the mustard a spicy one. It all depends on your family's taste.

Pork Chops with Bok Choy and Rice Noodles image

We've created your new go-to dish: a one-pot meal that features pork, vegetables, noodles, and all your favorite Asian flavors.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 25m

Number Of Ingredients 13

1 package (6 to 8 ounces) rice noodles
3 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1 tablespoon toasted sesame oil
1/4 to 1/2 teaspoon red-pepper flakes
2 tablespoons vegetable oil
4 boneless center-cut pork chops, (about 6 ounces each)
Coarse salt and ground pepper
1 large bok choy, (about 2 pounds), trimmed, cut crosswise into 1-inch strips, and washed (with some water still clinging to leaves)
4 scallions, thinly sliced, white and green parts separated
4 cloves garlic, sliced
1 piece (about 2 inches) fresh ginger, peeled and minced

Steps:

  • In a large bowl of hot tap water, soak noodles until soft, 10 to 15 minutes; drain and set aside. Meanwhile, make sauce: In a small bowl, whisk together soy sauce, vinegar, sugar, sesame oil, and red-pepper flakes; set aside.
  • In a large skillet with a lid, heat oil over medium-high. Season pork chops with salt and pepper. Place in skillet, and cook, turning once, until opaque throughout, 3 to 4 minutes per side. Transfer chops to a plate; loosely cover with aluminum foil, and set aside.
  • To skillet, add bok choy, scallion whites, garlic, and ginger. Cover and cook, tossing occasionally, until bok choy stems are crisp-tender, 4 to 5 minutes.
  • Add noodles and sauce from step 1. Cook, tossing gently, until noodles are heated through, 2 to 3 minutes.
  • Thinly slice pork chops. Serve on top of noodles, and sprinkle with scallion greens.

Tips:

  • Choose the right pork chops. Look for pork chops that are about 1 inch thick and have a good amount of marbling. This will ensure that they are juicy and flavorful.
  • Season the pork chops well. Pork chops can handle a lot of seasoning, so don't be afraid to use your favorite herbs and spices. Some good options include salt, pepper, garlic powder, onion powder, paprika, and cumin.
  • Cook the pork chops over medium heat. This will help to prevent them from drying out. If you cook them over high heat, they will be more likely to burn on the outside and be raw on the inside.
  • Use a meat thermometer to ensure that the pork chops are cooked to your desired doneness. The internal temperature of the pork chops should be 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
  • Let the pork chops rest for a few minutes before serving. This will help the juices to redistribute throughout the meat, making them more tender and flavorful.
