¾ cup heavy cream

1 tablespoon olive oil
8 boneless pork loin chops
Salt
Freshly ground black pepper
1 tablespoon dried thyme
1 tablespoon dried tarragon
1/2 cup dry Champagne
1 cup milk
1 tablespoon all-purpose flour
1/2 cup sliced black olives
1 loaf raisin bread, sliced crosswise into 1/2-inch thick slices and toasted
4 to 6 ounces mascarpone cheese
2 pears, cored and thinly sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Season both sides of pork with salt, black pepper, thyme and tarragon. Add chops to hot skillet and cook 2 minutes per side, until golden brown. Add Champagne and cook 1 minute.
  • Remove 4 chops from skillet and set aside.

2 pounds boneless pork chops
½ teaspoon paprika
kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.

1 cup low sodium chicken broth
1/4 cup garlic clove, peeled and crushed, about 12-15
1/2 teaspoon olive oil
4 boneless pork loin chops, about 1/4-inch thick
1 tablespoon fresh parsley, minced
1/2 teaspoon dried tarragon leaves
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons water
1 tablespoon all-purpose flour
1 tablespoon dry sherry

Steps:

  • Place chicken broth and garlic in a small saucepan and bring to a boil over high heat, cover; reduce heat to low and simmer 25-30 minutes. or until garlic mashes easily with a fork. Set aside to cool and then puree until smooth in a blender or food processor.
