1 tablespoon lemon pepper
8 tablespoons butter

4 bone-in pork chops (12 ounces each, 1 1/2 inches thick), preferably pasture-raised
Coarse salt and freshly ground pepper
Safflower oil, for searing (2 to 4 tablespoons)
1 lemon, cut into wedges

Steps:

  • Generously season pork chops on both sides with salt and pepper. Let stand for 30 minutes.
  • Preheat oven to 425 degrees. Heat enough oil to coat the bottom of a large ovenproof skillet (1 to 2 tablespoons) over medium-high heat. Blot excess moisture off pork chops with paper towels.
