1 tablespoon ground ginger
1 tablespoon light brown sugar
1 teaspoon chipotle chili powder, or to taste

2 (1 1/2 pound) pork tenderloins
4 apples, peeled and cut into 8 pieces each
1 large sweet potato, peeled and cut into 1 1/2-inch pieces
4 tablespoons butter, cut into small pieces
1 ½ cups apple cider
1 lime, juiced
½ teaspoon granulated garlic
½ teaspoon ground ginger
⅛ teaspoon chipotle chile powder
⅛ teaspoon garam masala
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Mix together 1 tablespoon ginger, brown sugar, 1 teaspoon chili powder, salt, and pepper in a bowl to create a rub. Rub combined seasonings on all sides of the pork tenderloins, using the entire amount.
  • Place apples and sweet potatoes in the bottom of the prepared pan; dot with butter.
  • Mix together apple cider, lime juice, garlic, 1/2 teaspoon ginger, 1/8 teaspoon chili powder, garam masala, salt, and pepper in a bowl. Pour over apples and sweet potatoes and place tenderloins on top.
  • Bake in the preheated oven for 20 minutes.   • Remove apples and sweet potatoes to a serving platter using a slotted spoon. Place tenderloins on top and cover with aluminum foil.
  • Pour cooking liquid from the baking dish into a 1-quart saucepan. Heat over medium-high heat until liquid comes to a boil. Boil, stirring occasionally, until the mixture is reduced by one half, 10 to 15 minutes.

1 1/2 teaspoons kosher salt, divided, plus more

1/2 medium onion, thinly sliced
2 garlic cloves, finely chopped
4 ounces asparagus (about 4 medium spears), trimmed and cut diagonally into 1-inch pieces
8 large eggs
1/4 cup grated Parmesan
3 tablespoons heavy cream
1/4 cup beet green pesto (see headnote) or 1 tablespoon finely chopped herbs plus 2 tablespoons olive oil

Steps:

  • Preheat oven to 350°F. Heat a 10" ovenproof skillet over medium-high. Add fennel seeds and toast, stirring constantly, until fragrant, 1 minute. Add pork, 1 tsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper and cook, breaking up pieces with a wooden spoon or spatula, until browned and cooked through, about 5 minutes more. Scrape pork mixture into a medium bowl.
  • Heat 1 Tbsp. oil in same skillet over medium. Add onion, 1/4 tsp. salt, and 1/4 tsp. pepper and cook, stirring occasionally, until softened and translucent, about 5 minutes. 1/2 pound chicken-apple sausage, removed from casing
1/2 cup red onion, diced

1/2 cup milk
1/2 teaspoon paprika

2 (9-inch) flour tortillas
1/4 cup jack cheese, shredded

Steps:

  • Preheat oven to 350 degrees F.
  • In a saute pan over medium-high heat, add 2 tablespoons oil and the chicken sausage, onions, jalapenos, peppers and saute until vegetables have softened.
  • In medium bowl, mix eggs, milk, paprika and salt and pepper.
  • Add chicken sausage and vegetable mixture and eggs together. Heat a medium saute pan over medium heat and add 1 teaspoon olive oil, and pour in egg mixture. Cook for 3 minutes on each side, mixture should be slightly firm and moist. In the mean time add tortillas to oven and toast for 3 to 5 minutes until golden brown, then remove.
  • Remove frittata from pan, place one tortilla on bottom of pan and spread with 1/2 of the cheese, place cooked frittata on top, and top frittata with second tortilla. Top tortilla with remaining cheese and place pan in oven for 5 minutes or until cheese melts.
  • Remove from oven and garnish with scallions and tomatoes.

6 pork loin chops
1 garlic clove, cut
2 teaspoons butter
2 granny smith apples, cut into 1/2-inch slices
2 onions, sliced
2 tablespoons flour
2 tablespoons lemon juice
2 cups applesauce
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves

Steps:

  • Trim chops.
  • Rub both sides with cut garlic, then sprinkle with pepper and salt to taste.
  • Brown on both sides in skillet with melted butter.
  • In a greased casserole, place a layer of apples and onions, using about half. Put chops on top, then cover the whole with remaining apples and onions.
  • Stir flour into sediment in skillet and add 2 cups of boiling water, stirring constantly till thickened.
  • Add the lemon juice, applesauce and spices.
  • Make sure it is well mixed, then gently pour into casserole.
  • Cover casserole dish with foil or lid, and cook for 1 hour, 10 minutes at 350 degrees. Remove cover and bake for an additional 20 minutes.

350g piece pork fillet, cut from the middle of the fillet
1½ tbsp garam masala
1 tbsp olive oil
25g butter
1 large banana shallot, halved (keep the skin on)
1 tsp plain flour
100ml white wine
300ml chicken stock
2 'cheeks' from a whole Granny Smiths apple

Steps:

  • Heat oven to 220C/200C fan/gas 7. Season the pork well and roll the fillet in 1 tbsp of the garam masala. Heat the oil in a frying pan and brown the pork well all over. Remove from the pan and wrap tightly in foil to create a rounded sausage shape, twisting the ends so you have a cylinder. Can be done the day before and kept in the fridge.
  • Heat the butter in an ovenproof frying pan and sizzle the shallot, cut-side down, for 5 mins until slightly charred. Baste with the butter in the pan and add the pork roll, still in its foil. Put in the oven for 20 mins, turning the pork once. Remove the pork and shallot, and keep warm.
  • Sizzle the flour in the pan over a medium heat, then add the wine and reduce until there's almost no liquid left. Add the stock, simmer to make a sauce, then add the rest of the garam masala and keep warm
  • Cut the fillet, still in its foil, into two and slice each piece on the angle lengthways so you have four pointed pieces. Remove the foil and pour any juices into the sauce. Finely slice each apple cheek, then fan out one on each plate, sitting a piece of pork on top. Put a slice of domino potatoes (see recipe in 'Goes well with', right) beside it, with a shallot and another piece of pork on top. Drizzle with sauce and serve.

1 large potato, cut into chunks
500 g pork mince
1 medium onion, finely chopped
2 teaspoons dried sage
2 tablespoons chives, finely chopped
1 egg, lightly beaten
salt and pepper
2 teaspoons oil
3 medium apples
20 g butter
1/2 cup water
1/2 teaspoon ground ginger
1/2 teaspoon mixed spice
2 tablespoons fruit chutney

Steps:

  • Boil the potato until just soft. Mash until chunks are just broken up; don't over mash.
  • Put potato, mince, onion, herbs and egg in a bowl and combine thoroughly.
