Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Melt the butter in a skillet over medium heat, and stir in the black pepper, cayenne pepper, thyme, oregano, dry mustard powder, and garlic. Cook and stir until the garlic is fragrant, about 1 minute. Remove from heat.
- With a sharp knife, make several small slits in the pork roast. Place the roast into a roasting pan, and spread the spice mixture all over the roast and in the incisions. Surround the roast with celery, carrots, and onion, and season to taste with salt and black pepper.
- Roast in the preheated oven until the pork roast is browned and an instant-read meat thermometer inserted into the center of the roast reads at least 150 degrees F (65 degrees C), about 2 hours. About 15 minutes before the end of cooking, turn the oven temperature up to 425 to help brown the roast.
- Remove pork roast from oven, and allow to stand for about 10 minutes before slicing. Check temperature again; roast temperature should be at least 160 degrees F (75 degrees C) before serving.
- While roast is resting, place the roasting pan containing vegetables and pan drippings over a stove burner set to medium heat. Whisk in the flour, and simmer the drippings and flour for about 3 minutes to remove raw taste from flour. Whisk in the pork stock, a little at a time, until the gravy is thickened. Strain the gravy, and serve with the roast.

PORK TENDERLOIN WITH ROASTED GRAPES AND MASHED SWEET POTATOES
Steps:
- For the Pork Tenderloin with Roasted Grapes: Preheat the oven to 375 degrees F.
- Cook the bacon lardon in a large skillet over medium heat until crisp, 5 to 6 minutes. Use a slotted spoon to remove the bacon and drain on a towel-lined plate. Reserve the bacon for the potatoes. Reserve the skillet with bacon fat to cook the pork.
- Toast the fennel seeds in a small skillet over medium heat until fragrant, about 2 to 3 minutes. Transfer to a spice grinder and grind into a fine powder.
- Season the pork generously with salt and pepper. Return the large skillet with bacon fat to medium-high heat. Place the pork in the pan and cook on all sides until rich golden brown, about 8 minutes. Remove the pork from the pan, dust the pork with the toasted ground fennel seeds, and place on a sheet pan fitted with a rack. Roast in the oven until the internal temperature reaches 150 degrees F, about 14 minutes. Allow to rest 10 minutes until ready to serve.
- Drain the fat from the skillet and place over medium-low heat. Add the extra-virgin olive oil and shallots and cook until softened, about 2 minutes. Season with salt then pour in the port and scrape with a wooden spoon to release the bits from the bottom of the pan. Add the grapes and cook the grapes until they split and let out their juices, about 10 minutes.
- Add half of the chicken stock, let it reduce slightly, then add the remaining stock and let cook until sauce is reduced by half and thickened, 8 to 10 minutes. Taste and re-season if needed.
- For the Mashed Sweet Potatoes: Add the sweet potatoes to a large pot and cover with cool water. Bring to a boil and cook until tender, about 15 minutes. Drain and return the cooked potatoes to the pot.
- Add the heavy cream and butter and combine with a hand mixer until smooth. Mash with a potato masher. Add the brown sugar, heavy cream and cumin and mix with a spatula to combine. Season to taste with salt. Add the cayenne, cumin, light brown sugar, reserved bacon and some salt and fold to combine.
- Slice the pork on a bias. Serve with the sweet potatoes and top with the grapes, sauce and chives.

I have a family of onion-lovers so I always double the recipe, this gravy has tons of flavor, if you love onions then then you will love this! If you want a dark richer gravy then omit the water and use 1 cup consomme. This is delicious served with a pork roast and mashed taters or over fries, do not add in any extra salt until end of cooking :)

Tips:
- Choose the right cut of pork: For a moist and flavorful roast, choose a pork shoulder or pork butt. These cuts have a higher fat content, which will help keep the meat tender and juicy during cooking.
- Season the pork well: Before roasting, season the pork with salt, pepper, and your favorite herbs and spices. This will help to enhance the flavor of the meat.
- Cook the pork at a low temperature: To prevent the pork from drying out, cook it at a low temperature (300-325°F) for several hours. This will allow the meat to cook evenly and become fall-off-the-bone tender.
- Make a flavorful gravy: While the pork is roasting, make a gravy using the pan drippings. This will add extra flavor to the meat and make it even more delicious.
- Serve the pork with your favorite sides: Mashed potatoes, stuffing, and green beans are all classic side dishes that go well with pork roast.
Conclusion:
Pork roast is a delicious and satisfying meal that is perfect for a special occasion or a weeknight dinner. By following these tips, you can make a pork roast that is moist, flavorful, and fall-off-the-bone tender. So next time you're looking for a hearty and comforting meal, give pork roast a try!
