Roasted Garlic And Herb Pork Roast Recipe by Tasty image

Here's what you need: garlic, olive oil, Kroger® Boneless Whole Pork Tenderloin, kosher salt, freshly ground black pepper, dried thyme, dried rosemary, rubbed sage, garlic powder, dijon mustard, unsalted butter, fresh rosemary, fresh thyme, garlic, all purpose flour, white wine, chicken stock, kosher salt

Provided by Kroger

Categories     Dinner

Yield 4 servings

Number Of Ingredients 18

5 cloves garlic
¾ cup olive oil, divided, plus 1½ tsp
1 Kroger® Boneless Whole Pork Tenderloin
2 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 tablespoon rubbed sage
1 teaspoon garlic powder
3 teaspoons dijon mustard
3 tablespoons unsalted butter
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 teaspoon garlic, minced
3 tablespoons all purpose flour
¼ cup white wine
2 cups chicken stock
½ teaspoon kosher salt

Steps:

  • Preheat the oven 350°F (180°C). Line a small baking sheet with parchment paper.
  • Add the garlic to the baking sheet and coat with ½ teaspoon of olive oil. Roast for 10 minutes, or until golden brown. Remove from the oven and let cool. Once cool enough to handle, mince the garlic.
  • Place the Kroger® Boneless Whole Pork Tenderloin in a gallon-size resealable bag. Add the salt, black pepper, thyme, rosemary, sage, garlic powder, minced roasted garlic, Dijon mustard, and ¾ cup olive oil. Shake the bag until pork loin is well coated. Seal the bag and transfer to the refrigerator to marinate for 2 hours, or overnight.
  • Preheat the oven to 350°F (180°C).
  • Remove the pork loin from the marinade.
  • Heat the remaining 1 teaspoon of olive oil in a large skillet over medium-high heat. Starting with the fattiest side, sear the pork loin on all sides until light golden brown, 2-3 minutes per side.
  • Transfer the seared pork loin to a 9x13" baking dish and cover with aluminum foil. Bake for 40 minutes, then remove the foil and bake for 5 minutes more, until the internal temperature reaches 145°F (63°C).
  • Meanwhile, make the gravy: Place the skillet used to sear the pork roast over medium heat. Melt the butter and add the rosemary, thyme, and garlic. Cook until fragrant, about 1 minute. Whisk in the flour and cook until the flour turns golden brown in color, about 2 minutes. Deglaze the pan with the white wine, scraping up any browned bits from the bottom. Cook until reduced by half, about 45 seconds. Add the chicken stock and stir to combine, breaking up any clumps from the flour. Simmer for 3 minutes, or until the gravy thickens. Stir in the salt. Remove the thyme and rosemary sprigs, then strain the gravy through a fine-mesh sieve into a gravy boat or medium bowl. Keep warm until ready to serve.
  • Serve the pork roast warm with the garlic, herb gravy, and holiday vegetables of choice alongside.
  • Enjoy!

ROSEMARY-THYME PORK BAKED IN GARLIC MILK

Rosemary-Thyme Pork Baked in Garlic Milk image

This was my New Year's 2004 creation; I served it with with my Lemony Black-Eyed Pea and Cilantro Salad and mustard greens. The pork is first marinated in rosemary, thyme and lemon, then slowly cooked in milk studded with garlic slices. Prep time includes marinating meat overnight.

Provided by EdsGirlAngie

Categories     Pork

Time 10h

Yield 4-6 serving(s)

Number Of Ingredients 9

1/2 cup olive oil
4 tablespoons lemon juice
2 cloves garlic, chopped
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 small boneless pork roast
enough milk, to come 2/3 up side of roast in pan
black pepper
2 cloves garlic, sliced

Steps:

  • Marinate pork roast overnight in olive oil, lemon juice, garlic, rosemary and thyme.
  • When ready to cook, brush off herbs slightly and place in a deep baking dish.
  • Pour enough milk in pan to come up 2/3 of the sides of the meat.
  • Sprinkle top liberally with black pepper to taste, then scatter garlic slices in the milk, cover and bake at 325 degrees F for about 1-1/2 to 2 hours, or until pork is tender and done.
  • At this point, I usually discard the milk when the meat is done; maybe a gravy could be made of the milk and pan juices, but I've never attempted this since we're not gravy fans.

Time 3h20m

½ tablespoon ground black pepper
3 bay leaves
½ cup cider vinegar
1 teaspoon dried thyme

  • Bake in the preheated oven 3 hours, or until an internal temperature of 145 degrees F (63 degrees C) is reached. Using a baster or spoon, baste the drippings over the roast frequently while it is cooking. Let the roast rest for 10 minutes when done before slicing.

Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is a flavorful and affordable cut that is perfect for roasting. It has a good amount of fat that will help keep the meat moist during cooking.
  • Prep your pork: Before roasting, pat the pork dry with paper towels and season it generously with salt, pepper, and your favorite herbs and spices. You can also rub the pork with olive oil or melted butter to help it brown.
  • Sear the pork: Searing the pork before roasting helps to develop a delicious crust and lock in the juices. Heat a large skillet over medium-high heat and sear the pork on all sides until it is browned. You can also use a grill or a broiler to sear the pork.
  • Roast the pork: Transfer the seared pork to a roasting pan and add your desired vegetables and herbs. Roast the pork in a preheated oven at 325 degrees Fahrenheit for 2-3 hours, or until the internal temperature reaches 145 degrees Fahrenheit.
  • Let the pork rest: Once the pork is cooked, let it rest for 10-15 minutes before slicing. This will help the juices redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

Pork roast with rosemary and thyme is a classic dish that is perfect for a special occasion or a casual weeknight meal. With its tender meat, flavorful vegetables, and aromatic herbs, this dish is sure to please everyone at the table. So next time you're looking for a delicious and easy pork roast recipe, give this one a try!
