SLOW COOKER PORK, SAUERKRAUT, AND BEER

Slow Cooker Pork, Sauerkraut, and Beer image

A family slow cooker favorite that's easy to put together. The beer enhances the flavor of the sauerkraut and pork. There is no need to brown the pork roast before placing it in the slow cooker. I serve this with scalloped or mashed potatoes.

Categories     Pork

Time 8h10m

Yield 8 serving(s)

Number Of Ingredients 8

32 ounces undrained sauerkraut
1 1/2 tablespoons sugar
12 ounces dark beer or 12 ounces ale (I use a dark Mexican beer)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
paprika
4 lbs pork roast, of your choice

Steps:

  • Mix the sugar throughout the sauerkraut.
  • Pour undrained sauerkraut on the bottom of your slow cooker.
  • Next, pour dark beer over sauerkraut.
  • Blend together the salt, garlic powder, black pepper, and paprika.
  • Rub spice mixture onto roast.
  • With fat side up, place pork roast in the middle of slow cooker.
  • Cook on Low for 8 to 10 hours or High for 5 to 6 hours.

Tips:

  • Choose the right cut of pork. Pork shoulder is a good choice because it is a fatty cut that will become tender when cooked slowly. You can also use pork loin, but it will be leaner and less flavorful.
  • Brown the pork before braising. This will help to develop the flavor of the meat and give it a nice crust.
  • Use a good quality sauerkraut. Look for sauerkraut that is made with fresh cabbage and has a tangy flavor.
  • Don't boil the sauerkraut. Bring it to a simmer and then let it cook gently for at least 30 minutes, or until it is softened.
  • Add beer to the braising liquid. This will add flavor and complexity to the dish.
  • Season the dish to taste. You may want to add salt, pepper, garlic, or other spices.
  • Serve with your favorite sides. Pork sauerkraut and beer goes well with mashed potatoes, egg noodles, or bread.

Conclusion:

Pork sauerkraut and beer is a hearty and flavorful dish that is perfect for a cold winter night. It is easy to make and can be tailored to your own taste. So next time you are looking for a comforting and delicious meal, give pork sauerkraut and beer a try. You won't be disappointed!
