Steps:
- Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
- Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.
- Stir the apple, cranberries, pecans, and onion into the stuffing mix. Season the pork loin with salt and pepper to taste, then spread the stuffing mix onto the cut side of the loin. Roll the pork into a firm cylinder, and secure with cooking twine. Place into the prepared roasting pan.
- Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Remove kitchen twine before slicing and serving.

Tips:
- To ensure the pork tenderloin cooks evenly, use a meat thermometer to check the internal temperature, which should reach 145 degrees Fahrenheit (63 degrees Celsius) for medium-rare or 160 degrees Fahrenheit (71 degrees Celsius) for medium.
- If you don't have a meat thermometer, you can also check for doneness by making a small incision in the thickest part of the tenderloin. The meat should be slightly pink in the center for medium-rare or completely white for medium.
- To make the cranberry-apple chutney, use a food processor to finely chop the cranberries and apples. You can also use a sharp knife to chop them by hand, but be sure to chop them very finely.
- If you don't have a food processor, you can also grate the cranberries and apples using a box grater.
- Be sure to adjust the amount of sugar in the chutney to your liking. If you prefer a sweeter chutney, add more sugar. If you prefer a less sweet chutney, add less sugar.
- The chutney can be made ahead of time and stored in the refrigerator for up to 2 weeks. This makes it a great option for a quick and easy weeknight meal.
Conclusion:
Pork tenderloin with cranberry-apple chutney is a delicious and easy-to-make recipe that is perfect for any occasion. The tenderloin is cooked to perfection and the chutney adds a sweet and tangy flavor that complements the pork perfectly. This dish is sure to be a hit with your family and friends.
