ROAST PORK ON TOAST ROUNDS WITH MANGO CHUTNEY

Roast Pork on Toast Rounds with Mango Chutney image

Leftover roast pork is ideal for this hors d'oeuvre, but roast pork is also available at the deli section of most grocery stores. If not, sliced pork tenderloin is the perfect size for topping toasts. To cook, heat a medium (10-inch) skillet over high heat. Place a tenderloin that has been oiled, salted and peppered in the skillet. Cook, turning occasionally, until the meat reaches an internal temperature of 140 degrees, about 20 minutes.

Tips:

  • To ensure that the pork tenderloin is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145°F (63°C) for medium-rare, 155°F (68°C) for medium, or 165°F (74°C) for well done.
  • If you don't have a meat thermometer, you can also check the doneness of the pork by cutting into it. The meat should be slightly pink in the center for medium-rare, or cooked through with no pink for medium or well done.
  • Let the pork tenderloin rest for 10 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • To make the mango chutney, use ripe mangoes. This will give the chutney a sweeter and more flavorful taste.
  • If you don't have any mango chutney on hand, you can substitute another type of fruit chutney, such as apple chutney or pear chutney.

Conclusion:

Pork tenderloin with mango chutney is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight dinner. The pork is tender and juicy, while the mango chutney adds a sweet and tangy flavor. This dish is sure to please everyone at your table.
