Four 1-inch-thick boneless pork chops
1/4 cup blue cheese powder
4 teaspoons black pepper
2 teaspoons kosher salt
12 thin slices bacon
4 tablespoons butter
4 tablespoons hot sauce
1 teaspoon garlic powder
1/2 teaspoon cayenne

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut each pork chop lengthwise into 3 pieces. Combine the blue cheese powder, black pepper and salt in a bowl. Sprinkle the pork "wings" on all sides with the spice mixture. Barbecue Rub #67, recipe follows
Barbecue sauce, for dipping
1/2 cup Sugar in the Raw
1/2 cup kosher salt
3 tablespoons chili powder
3 tablespoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon lemon pepper
1/2 teaspoon ground coffee
1/4 teaspoon cayenne pepper

Steps:

12 trimmed bone-in pork shanks
salt and pepper
3 cloves finely minced garlic
1 (14 ounce) box of chicken broth or chicken stock
1 cup Sweet Baby Ray's Hickory and Brown Sugar Barbecue sauce

Put a rack inside a shallow roasting pan to keep the ribs off the bottom of the pan.
