1/2 cup marinara sauce
1 cup shredded mozzarella cheese
1 (3-ounce) package thinly sliced prosciutto (deli section)

2 tablespoons fresh basil, chopped

  • Preheat oven to 425 degrees F.

½ quantity pizza dough (see Basic pizza dough recipe in 'goes well with', right), divided into 2 balls
1 small aubergine , thinly sliced lengthways
1 medium red onion , thickly sliced
2 tbsp extra virgin olive oil
4 tbsp fresh pesto (shop-bought or homemade)
75g firm goat's cheese
chilli flakes (optional)
basil leaves , to serve

Steps:

  • Prepare the dough following the instructions in Basic pizza dough recipe in 'goes well with', right.
  • Toss the vegetables in the oil and season well. Grill on your barbecue or griddle pan, about 5 mins each side, until black lines appear and the aubergines are soft. Remove and set aside. Cook one side of the pizzas.
  • Spread the pesto onto the cooked side of the pizzas. Add the aubergine, onion and goat's cheese, broken into chunks, plus chilli flakes if you like it spicy. Grill, covered, until the cheese is melted. Serve with the basil leaves sprinkled over.

125g wholemeal flour , plus a little for kneading if necessary
½ tsp instant yeast
pinch of salt
1 tsp rapeseed oil , plus extra for greasing
2 onions , halved and thinly sliced
2 tsp rapeseed oil
2 tsp balsamic vinegar
160g baby spinach leaves (not the very tiny ones), chopped
2 large garlic cloves , finely grated
50g soft goat's cheese
4 pitted Kalamata olives , quartered
few soft thyme leaves
1 tsp sunflower seeds

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and just under 100ml warm water then mix to a soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you make the topping. There is no need to let the dough prove for a specific time - just let it sit while you get on with the next step.
  • Tip the onions into a non-stick wok and add the oil, 4 tbsp water and balsamic vinegar. Cover with a saucepan lid that sits inside the pan to help the onions soften, then cook for 15 mins, stirring about 3 times and replacing the lid quickly so as not to lose too much moisture. After the time is up, the onions should be golden and all the liquid gone. Tip onto a plate. Add the spinach and garlic to the pan and stir-fry until the spinach has wilted.
  • Take the dough from the bowl and cut in half with an oiled knife, then press each piece into a 25-15 cm oval on a large greased baking sheet with oiled hands. Don't knead the dough first otherwise it will be too elastic and it will keep shrinking back.
  • Spread with the spinach followed by the onions, then dot with the cheese and scatter with the olives, thyme and sunflower seeds. Bake for 15 mins until golden and the base is cooked through.

1 1/4 ounce packaged dry yeast
1 cup lukewarm water
2 1/2 cups high-gluten flour
1 teaspoon salt
4 tablespoons olive oil
1 pound baby artichokes
1 clove garlic, green part removed, minced
1 medium onion, sliced
1 tablespoon rosemary leaves
Coarse salt and freshly ground pepper to taste
3 ounces goat cheese
3 tablespoons pine nuts

Steps:

  • Make the pizza dough. Combine the yeast with one-quarter cup of the water. Cover and leave until doubled in volume. If the mixture does not rise, throw it away and use a fresh package of yeast.
  • If working by hand, combine the flour and salt and place on a smooth work surface. Make a well in the center and add the yeast mixture, two tablespoons olive oil and the remaining water. Gradually work the flour into the liquid using a wooden spoon. Knead until smooth and shiny, about eight to 10 minutes. Add more flour if the dough gets too sticky. If using a food processor, fit the bowl with a steel blade and put the flour, salt, two tablespoons olive oil, yeast mixture and remaining water into the bowl. Process until the dough forms a smooth ball, about 20 seconds. Place the dough on a smooth surface and knead for a couple of minutes, adding more flour if the dough is too sticky.
  • Put the dough in an oiled bowl. Cover with plastic wrap and let the dough rise in a warm place for one hour, until doubled. Punch down and knead into a smooth ball. Let rise again for one hour. Freeze half the dough for a second pizza.
  • Preheat the oven to 400 degrees.
  • Trim the artichokes, cut them in half and saute until golden in the remaining olive oil. Remove from the frying pan.
  • Saute the garlic, onions and rosemary until the onions are soft. Season to taste with salt and pepper.
  • Spread the dough with the onion mixture. Top with the artichokes and sprinkle with the goat cheese and pine nuts. Bake for 18 to 20 minutes, or until the pizza is browned and crisp.

I have been craving pizza ever since I started my low carb diet... well I've officially given up doing the low carb thing, at least for a while, and I made this to celebrate my new dietary freedom. I used a balsamic vinegar infused with pomegranate... very yummy but I'm sure a normal balsamic would work just fine. I used a homemade pizza crust, so if you're using a pre-made crust you might want to decrease the bake time.

1 medium pizza crust
1/4 cup pizza sauce (decrease or increase to your own taste)
1 large sweet Italian sausage link, sliced
4 -5 thick slices bacon, diced
1/4 yellow onion, thinly sliced
2 -3 garlic cloves, diced
2 -3 sun-dried tomatoes, diced
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1/4 cup goat cheese, crumbed
chopped fresh herb, such as sage oregano basil (optional)
