1 package (16 ounces) potato gnocchi
2 tablespoons plus 1/3 cup olive oil, divided
1/2 pound sliced baby portobello mushrooms
3 teaspoons lemon juice
3 large plum tomatoes, seeded and chopped
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 package (5 ounces) fresh baby arugula or fresh baby spinach, coarsely chopped
1/2 cup pitted Greek olives, cut in half
1/3 cup minced fresh parsley
2 tablespoons capers, drained and chopped
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1/2 cup crumbled feta cheese
1/4 cup chopped walnuts, toasted

Steps:

  • In large nonstick skillet over medium-high heat, cook gnocchi in 1 tablespoon oil until lightly browned, 6-8 minutes, turning once. Remove from the skillet; cool slightly., In the same skillet, saute mushrooms in 1 tablespoon oil until tender. Place mushrooms and gnocchi in a serving bowl. Add lemon juice and remaining oil; gently toss to coat., Add the tomatoes, garbanzo beans, arugula, olives, parsley, capers, lemon zest, salt and pepper; toss to combine. 1/4 cup soy sauce
4 portobello mushrooms, cleaned, gills removed, quartered, and cut into slices 1/8 to 1/4-inch thick
1 red onion, diced
1 cup baby spinach (packed), soaked to remove grit, well rinsed and dried in a salad spinner or with paper towels
2 large ripe fresh tomatoes
1 tablespoon fresh dill, minced

4 large outer-leaves radicchio
3 medium-sized Portobello mushroom caps, stems and gills removed
2 tablespoons olive oil, plus more for the cheese
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons fresh lemon juice
2 tablespoons sherry or red wine vinegar
7 ounces mesclun lettuce mix (about 3 cups)
1/4 cup roasted red pepper strips
1/4 cup shelled walnut halves
1 lemon, cut into wedges

  • Preheat an outdoor grill or cast-iron grill pan to medium-high.

12 pearl onions
6 tablespoons olive oil
2 tablespoons finely chopped garlic
3 cups water
1 1/4 cups chopped celery
1 fennel bulb, trimmed, thinly sliced
8 ounces portobello mushrooms, stems trimmed, caps sliced
1 tablespoon balsamic vinegar
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon coriander
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme, or 1 teaspoon dried
1 bunch watercress
4 ounces feta cheese, crumbled

Steps:

  • Blanch onions in a saucepan of boiling water 2 minutes. Drain; cool. Peel onions.
  • Heat oil in heavy large skillet over medium-high heat. Add garlic and sauté 1 minute. Add water, celery, fennel, and onions; bring to boil. Add mushrooms, vinegar, salt, pepper, and coriander. Simmer mushrooms until tender, about 30 minutes. Pour mushroom mixture into strainer set over large bowl. Return strained liquid to same skillet. Boil until reduced to 1/2 cup, about 12 minutes. 4 large portabella mushrooms
1/3 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, thinly sliced
8 sprigs fresh thyme
2 bunches spinach (or 1 of each) or 2 bunches arugula (or 1 of each)
5 ounces thinly sliced prosciutto
1/2 cup shaved parmesan cheese (or goat cheese or feta)
2 tablespoons balsamic vinegar
1 1/2 teaspoons Dijon mustard
1/4 cup extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • MUSHROOMS: Cut stems off mushrooms& reserve for another use (soup?) or discard.
  • Using a spoon, carefully scrape gills off mushroom caps& discard; brush top of caps.
  • Brush small roasting pan with some of the oil& sprinkle with half the salt.
  • Place mushrooms in pan, drizzle with remaining oil, sprinkle with remaining salt& pepper.
  • Place 2 or 3 slices of garlic& 2 sprigs of thyme on each mushroom.
  • Roast in preheated 450F oven until tender, about 10 minutes.
