POSSUM PIE

Possum Pie image

I came across this recipe a few times on Facebook and Pinterest. Being from the South, the "Possum" part caught my attention, so I did some research. From what I have learned, this is an old recipe (over 50 years) and was originally published on a Ritz Cracker box. I don't know who dubbed it "Possum Pie," but it's tried, true,...

Time 55m

Number Of Ingredients 7

30 ritz crackers, crushed
3 eggs whites, beaten stiffly
1 c sugar
1 tsp vanilla
1 c pecans, in pieces
8 oz cool whip
8 oz coconut, flakes - toasted (optional)

Steps:

  • 1. -Preheat oven to 350. -Grease pie pan or baking dish with shortening. -Mix crackers, nuts, and sugar. -Fold in egg whites. -Add vanilla and mix well. -Pour into pan or dish and bake at 350'F for 25 minutes. -When cool, top with cool whip and coconut. -Best after refrigerated overnight.

Tips:

  • Choose the Right Possum: Opt for a young possum, as its meat is more tender and flavorful. Ensure it's properly cleaned and dressed before cooking.
  • Tenderize the Meat: To make the possum meat more tender, soak it in a mixture of milk and water for several hours or overnight. Alternatively, you can use a meat tenderizer or mallet to break down the fibers.
  • Season Generously: Don't be afraid to season the possum meat liberally. Common seasonings include salt, pepper, garlic powder, onion powder, paprika, and chili powder. You can also add fresh herbs like rosemary, thyme, or sage.
  • Cook Slowly: Possum meat is best cooked slowly over low heat. This allows the meat to become fall-off-the-bone tender and absorb all the delicious flavors of the seasonings.
  • Don't Overcook: Keep an eye on the possum meat to prevent overcooking. Overcooked possum meat can become tough and dry.

Conclusion:

Possum pie is a unique and flavorful dish that showcases the versatility of this often-overlooked meat. With careful preparation and cooking, you can create a delicious and satisfying meal that is sure to impress your family and friends. So, if you're looking for something new and exciting to try, give possum pie a chance. You might just be surprised at how much you enjoy it!
