CABBAGE, POTATO AND SAUSAGE SOUP
It was Sunday and I had not gone to the store. Both my pantry and fridge were bare and the weather was rainy and cold. I was really in the mood for some of Olive Garden's Tuscana Soup so I used what I had available and using a little creativity I created a nice soup for a cold rainy day that was not like the Tuscana soup but it satisfied my craving for something similar to it.

ITALIAN SAUSAGE AND POTATO BISQUE SOUP
This is one of the few recipes we have from my husband's mother. I have no clue why "bisque" is in the title, as that is traditionally a milk/cream based soup and there isn't a bit of that in it. It is one of our favorites and company has liked it, too. I'm putting it here because the strip of paper it was written on almost 30 years ago, is getting a bit tattered! Also, we usually double this recipe, as it freezes really well. This is also a great recipe to use up the leaves of your celery stalks. The leaves have a sharper flavor than the stalk does, which add to this dish.

SAUSAGE, POTATO AND KALE SOUP
Steps:
- In a 6-quart Copper Epicurious jumbo cooker, heat the chopped bacon over high until it becomes crispy, about 6-8 minutes. Using a slotted spoon, transfer the bacon pieces to a paper towel-lined plate, leaving behind as much fat as possible.
- Lower the heat to medium and add the onions to the pot. Cook, stirring occasionally, until the onions are caramelized, about 30 minutes. Add the garlic and sauté for 3 or 4 minutes, then add the sausage and cook, stirring, until it is completely cooked through, about 8-10 minutes. Pour the wine into the pot and cook, scraping the bottom of the pot with a wooden spoon, for about 5 minutes. Pour in the stock and bring to a simmer. Add the potatoes to the pot and cook until tender, about 12 minutes.
- In a small bowl, whisk together the cornstarch and water until it is combined. Add the cornstarch mixture into the pot and stir until thickened, about 10 minutes. Stir in the cream and season with salt, pepper, and crushed red pepper flakes.
- Just before serving, stir in the kale leaves. Serve the soup with a sprinkling of Pecorino Romano cheese and Tuscan bread.

Steps:
- In large pot, heat oil over medium heat. Add Italian sausage links and cook, turning until browned and cooked through, about 8-10 minutes.
- Take sausage out of pot and slice 1/4" thick.
- Add onion to the drippings in pot and cook, stirring, until lightly browned, 2-3 minutes.
- Return sausage to pot with garlic powder and pepper. Cook, stirring, for one minute.
- Stir in water and chicken bouillon granules. Add sweet potatoes. Cover; bring to simmer over medium-low heat. Cook, stirring occasionally, until potatoes are tender, 10-12 minutes.
- Stir in kale. Cover; cook over low until kale is wilted, 5-6 minutes.
- Sprinkle old-fashioned rolled oats over soup. Cover; cook, stirring occasionally, until oatmeal is softened and cooked through, 5 minutes.
- Serve with crusty bread.
Tips:
- Use a Dutch oven or large pot to make the soup. This will ensure that the soup has plenty of room to simmer and the ingredients will cook evenly.
- If you don't have any leftover mashed potatoes, you can use instant mashed potatoes instead. Just follow the package directions for preparing the mashed potatoes.
- You can use any type of sausage that you like in this soup. Italian sausage, bratwurst, and kielbasa are all good options.
- If you want a thicker soup, you can add more mashed potatoes or cornstarch. To add cornstarch, mix 1 tablespoon of cornstarch with 1 tablespoon of water until it forms a slurry. Then, stir the slurry into the soup and bring it to a boil. The soup will thicken as it cools.
- Garnish the soup with chopped parsley, chives, or green onions before serving.
Conclusion:
