1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
salt and pepper to taste
¼ cup milk
½ cup chopped onion
½ cup chopped green bell pepper
½ cup chopped fresh parsley
paprika to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, salt, pepper, milk, onion and bell pepper; mix well. Spoon into prepared pan and sprinkle with parsley, paprika and cheese.
  • Bake in preheated oven for 1 1/2 to 2 hours.

2 pounds mashed sweet potatoes
2 eggs
1 ½ cups white sugar
¼ cup butter
⅓ cup sweetened condensed milk
1 cup cornflakes cereal, crumbled
½ cup chopped pecans
¼ cup butter
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 2 quart casserole dish with non-stick cooking spray.
  • Combine the sweet potatoes, eggs, white sugar, 1/4 cup of the butter or margarine and the milk. Mix until well blended. Spoon sweet potato mixture into the prepare casserole dish.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes.
  • Combine the crushed cornflakes, pecans, remaining 1/4 cup butter or margarine, and brown sugar to taste. Sprinkle over the top of the baked sweet potatoes and return to the oven and bake for another 15 minutes or until lightly browned.

3 cups sweet potatoes, cooked, prepared from 2 pounds raw
1 cup sugar
1/2 cup butter, melted
2 eggs, well beaten
1 teaspoon vanilla extract
1/3 cup milk
1/2 cup brown sugar, firmly packed
1/4 cup all-purpose flour
2 1/2 teaspoons butter, melted
1/2 cup pecans, chopped

Steps:
