  • Boil gently for 2 minutes.
  • Remove from heat.
  • Stir in salt and pepper.
  • Slice half an onion into wide rings.

  • Bake for 15 minutes, or until top begins to brown and sauce is bubbly.
  • Serves 2-4.
  • NOTE: Tested at high altitude.
  • You may need to reduce the amount of liquids and/or cooking times.

Tips:

  • For the best results, use Yukon Gold or red potatoes. These varieties hold their shape well and have a creamy texture.
  • Peel the potatoes before boiling them. This will help them cook evenly and prevent the skins from becoming tough.
  • Boil the potatoes in salted water. This will help to flavor them and prevent them from becoming bland.
  • Once the potatoes are cooked, drain them well and let them cool slightly before slicing them.
  • Use a sharp knife to slice the potatoes. This will help to prevent them from breaking or crumbling.
  • Layer the potatoes in a greased baking dish. Make sure that the potatoes are evenly spaced out so that they cook evenly.
  • Pour the cheese sauce over the potatoes and spread it evenly. You can use any type of cheese sauce that you like, but a cheddar cheese sauce is a classic choice.
  • Bake the potatoes in a preheated oven until they are golden brown and bubbly. The cooking time will vary depending on the thickness of the potatoes and the type of cheese sauce that you are using.
  • Serve the potatoes immediately. They can be served as a main course or a side dish.
