Tips:

  • To achieve a moist and fluffy pound cake, ensure all ingredients are measured accurately and at room temperature before mixing. Creaming the butter and sugar until light and fluffy incorporates air, resulting in a tender crumb.
  • Do not overmix the batter; overmixing can result in a dense, tough cake. Mix just until the ingredients are combined.
  • Fresh or frozen blueberries can be used in this recipe. If using frozen blueberries, thaw them completely before folding them into the batter. Toss the blueberries in a little flour before adding them to the batter to prevent them from sinking to the bottom of the cake.
  • For the lavender syrup, use culinary-grade lavender buds. The syrup can be made ahead of time and stored in the refrigerator for up to 2 weeks.

Conclusion:

This delightful pound cake with blueberries and lavender syrup is a perfect treat for any occasion. The combination of sweet and tart blueberries, moist pound cake, and fragrant lavender syrup creates a symphony of flavors that will tantalize your taste buds. Whether served as a dessert, snack, or afternoon tea treat, this cake is sure to impress and become a favorite.
