Time 20m

Yield 2-3 dozen, 30 serving(s)

Number Of Ingredients 11

1 1/2 cups packed brown sugar
1/2 cup applesauce
1 cup peanut butter
3 eggs or 3 egg whites
1 cup flour
1 1/2 teaspoons baking soda
4 cups quick oats
2 teaspoons vanilla
1 cup chocolate chips or 1 cup M&M's plain chocolate candy (optional)
3/4 cup raisins (optional)
3/4 cup chopped walnuts or 3/4 cup pecans (optional)

Steps:

  • Cream together; brown sugar, applesauce, peanut butter, eggs, and vanilla.
  • Blend in flour and baking soda.
  • Blend in oats.
  • Add your choice of optional ingredients; nuts, chocolate, raisins, or all of the above.
  • Mix well.
  • Drop by Tablespoonfuls onto ungreased cookie sheet.
  • Bake at 350 degrees for 15-20 minutes or til lightly browned.
  • Let cool 2 or 3 minutes before removing from pan.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cookies will be. If you don't have ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with an apple at room temperature for a few hours.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough. Mix just until the ingredients are combined.
  • Refrigerate the dough before baking: Chilling the dough for at least 30 minutes will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at a high temperature for a short amount of time: This will help the cookies develop a chewy texture on the inside and a crispy exterior.
  • Let the cookies cool completely before storing them: This will help the cookies set and prevent them from becoming crumbly.

Conclusion:

Power cookies are a delicious and nutritious snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. Whether you like them chewy, crispy, or somewhere in between, there is a power cookie recipe out there for you. So next time you are looking for a healthy and satisfying snack, give power cookies a try.
