Prairie gasada refers to a type of Korean beef barbeque. The term "gasada" means "cut into pieces", referring to the process of cutting the beef into strips for grilling. The beef is marinated in a flavorful sauce, typically made with soy sauce, garlic, ginger, sesame oil, and other spices. It is then cooked over a grill or griddle, often accompanied by vegetables such as onions, bell peppers, and mushrooms. Prairie gasada is a popular dish served in Korean restaurants and homes and can be enjoyed with rice, noodles, or a variety of other side dishes.

In this recipe, chunks of lean beef are simmered with fresh tomatoes, bell pepper, onion, garlic, and Mexican seasonings to make a rich spicy gravy (guisada). Serve with warm tortillas and garnish with guacamole, sour cream, and/or cheddar cheese for awesome guisada tacos. If your gravy is too thin, whisk a 1/2 cup of the gravy with 1 tablespoon of flour and stir it back into the meat mixture; cook until the sauce thickens, about 10 minutes.
