1 1/2 cups granulated sugar
3/4 cup packed brown sugar
1/2 cup butter, cut into pieces
1/2 cup milk
2 tablespoons corn syrup
5 cups pecan halves, toasted

Steps:

  • Line 15x10-inch pan with sides with waxed paper. In heavy 3-quart saucepan, stir together granulated sugar, brown sugar, butter, milk and corn syrup. Heat to boiling over medium heat, stirring constantly. Boil 7 to 8 minutes, stirring constantly, to 234°F on candy thermometer or until small amount of mixture dropped into a cup of very cold water forms a ball that flattens when removed from water.
  • Remove from heat; vigorously stir in pecans. Spoon mixture into pan, spreading in even layer. Let stand 20 minutes or until firm. Break into pieces. Store in airtight container at room temperature up to 1 week.

1 cup sugar
1 cup packed brown sugar
1/2 cup water
2 tablespoons honey
1/2 teaspoon ground cinnamon
3 teaspoons vanilla extract
1/4 teaspoon rum extract
3 cups pecan halves

Steps:

  • In a heavy saucepan, combine the sugars, water, honey and cinnamon. Bring to a boil over medium heat; do not stir. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; add extracts. Cool to lukewarm without stirring., Beat with a mixer for 2-3 minutes or until creamy. Stir in pecans until coated. 1 cup light brown sugar, packed
½ cup evaporated milk
¼ cup frozen orange juice concentrate
3 tablespoons butter
1 tablespoon vanilla extract
1 ½ cups pecan halves or pieces

  • Line 12 muffin cups with square sheets of waxed paper.

3-1/2 cups pecan halves
1/4 cup packed brown sugar
1/4 cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1-1/2 cups dried cranberries

Steps:

  • Place pecans in a greased 13-in. x 9-in. baking pan; set aside. In a small saucepan, combine the brown sugar, corn syrup and butter. Bring to a boil over medium heat, stirring constantly. Remove from the heat. Stir in vanilla and baking soda. Drizzle over pecans; stir until coated., Bake at 250° for 1 hour, stirring every 20 minutes. Add cranberries; toss to combine.
