PORK ROAST WITH APPLES IN A HONEY PLUM SAUCE

Pork Roast With Apples in a Honey Plum Sauce image

Make and share this Pork Roast With Apples in a Honey Plum Sauce recipe from Food.com.

Provided by 2Bleu

Categories     Plums

Time 1h15m

Yield 12 serving(s)

Number Of Ingredients 6

1 cup plum, pitted and peeled, and chopped fine
1 cup honey
6 granny smith apples, 1/4-inch slices
3 lbs boneless pork loin roast, center-cut
1/2 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste

Steps:

  • Preheat oven to 425°F Mix plums and honey in a saucepan over medium-low heat and simmer 15 minutes, stirring occasionally.
  • Meanwhile, place the apple slices on the bottom of a 9x13 glass baking dish. Season the tenderloin with salt and pepper and place it on top of the apples.
  • Pour about 1/2 cup of plum sauce over pork and apples and bake about 30 minutes or until pork reaches an internal temperature of 125 degrees F.
  • Pour on remaining sauce and continue to bake an additional 15 minutes or until internal temperature is 155°F Cover roast and allow to sit for 10 minutes before slicing.

Tips:

  • Choose the right cut of pork: For this recipe, a pork shoulder (also known as pork butt) is ideal. It's a flavorful and affordable cut that becomes incredibly tender when cooked low and slow.
  • Brown the pork before cooking: Browning the pork in a skillet before adding it to the pressure cooker helps to develop its flavor and create a delicious fond (brown bits) at the bottom of the pot.
  • Use a variety of apples: Don't be afraid to mix and match different types of apples in this recipe. A combination of tart and sweet apples creates a complex and flavorful sauce.
  • Don't overcrowd the pressure cooker: Make sure to leave enough space in the pressure cooker for the liquid to circulate and the pork to cook evenly.
  • Let the pressure cooker do its thing: Once you've added all the ingredients to the pressure cooker, let it do its job without opening the lid. This will ensure that the pork cooks properly and the sauce thickens.

Conclusion:

This pressure cooker pork with apples and dried plums is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork is tender and flavorful, the apples and dried plums add a touch of sweetness and tartness, and the sauce is rich and flavorful. Serve this dish with mashed potatoes, rice, or your favorite side dish for a complete and satisfying meal.
