6 (1 ounce) squares semisweet chocolate
⅓ cup unsalted butter
2 eggs
¾ cup buttermilk
½ cup white sugar
½ cup sour cream
1 ½ teaspoons vanilla extract
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  • Heat semisweet chocolate and butter together in a saucepan over low heat until melted, 3 to 5 minutes. Remove from heat and cool for about 10 minutes. Lightly beat eggs into cooled chocolate mixture.
  • Whisk chocolate-butter mixture, buttermilk, sugar, sour cream, and vanilla extract together in a bowl.

2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. ¾ cup buttermilk

1 cup mini semi-sweet chocolate chips
