A French Tomato Sauce With More

Provided by G. Stephen Jones

Categories     Sauces

Time 1h30m

Number Of Ingredients 10

2 tablespoons olive oil
1 yellow onion (finely chopped)
salt & pepper
2 pounds fresh tomatoes (or 1 - 35-ounce can plum tomatoes, drained, chopped)
2 cups white wine
¼ cup olive oil
4 cloves garlic (finely chopped)
1 cup cured black olives (pitted and coarsely chopped)
1 tablespoon capers (drained)
½ cup fresh herbs including basil (parsley and thyme, roughly chopped)

Steps:

  • Heat a medium sized saucepan over medium heat.
  • When hot, add 2 tablespoons olive oil, then the chopped onion. Season with a little salt and pepper.
  • Cook the onions for about 6 minutes until they begin to soften but don't let them brown. Be sure to stir often so they don't burn.
  • Add the tomatoes, cover the pan and cook over medium heat for 10 minutes to let the tomatoes release their juices. Again, don't forget to stir to help things along.
  • Add the wine and simmer the tomatoes uncovered on medium-low to medium heat for about 50 minutes or until the sauce gets thick and there is very little liquid left.
  • Using a blender, food processor or food mill, whatever you have available in your kitchen, carefully puree the sauce and reserve. Clean and dry the saucepan to cook the garlic, capers and olives.
  • Heat the saucepan over medium-low heat and when hot, add the ¼ cup of olive oil.
  • Add the chopped garlic and saute for about 5 minutes until golden but don't let the garlic burn.
  • Add the capers and chopped olives and cook for 5 more minutes.
  • Transfer the cooked tomato sauce back to the saucepan and stir in the fresh herbs. Taste and adjust seasonings with salt and pepper.
  • The sauce is ready to be served over chicken, fish, meat or pasta. If you don't use it all up, freeze some for a later meal. Great to have this sauce on-hand.

DOVER SOLE MEUNIERE

Dover Sole Meuniere image

Dover sole is one of my favorite dishes. It reminds me most of New York City and the iconic restaurants that have served this dish, especially during festive times around the holidays. I enjoy the presentation of the fish, which is generally done at the table; the energy and nostalgia of this process speaks to me of the holidays in Manhattan.

Time 30m

Yield 4 servings

Number Of Ingredients 8

1 to 2 cups quick-mixing flour, such as Wondra
Kosher salt and freshly ground black pepper
One 1- to 2-pound Dover sole, peeled and skirts trimmed
2 tablespoons clarified butter or canola oil
3 ounces high-fat French butter
3 lemons, juiced
2 tablespoons capers
2 tablespoons fresh parsley leaves, finely minced

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the flour in a shallow dish large enough for the whole fish. Season the flour with salt and pepper. Dredge the fish to lightly coat and set aside.
  • In a saute pan large enough to fit the whole fish, heat the clarified butter over medium-high heat. When the fat begins to lightly smoke, place the fish in the pan and cook, without moving, until browned, about 4 minutes. Turn the fish over and repeat on the other side. Transfer the fish to the oven on a sheet tray fitted with a rack. Cook until tender and cooked through at the thickest part of the spine, 8 to 10 minutes.
  • Heat the same saute pan with the high-fat butter it butter begins to lightly brown. Add the lemon juice (as much or as little as you like) to stop the cooking. Add the capers and finish with the parsley. Taste the sauce and season if necessary with more pepper but not salt because of the capers.
  • Rest the fish, then serve whole with the sauce poured over the top.

Tips:

  • Use fresh ingredients: The quality of your ingredients will greatly impact the flavor of your Provençal sauce. Make sure to use fresh herbs, vegetables, and fish.
  • Don't overcrowd the pan: When searing the fish, make sure to give each fillet plenty of space in the pan so that it can cook evenly.
  • Cook the fish over medium heat: Cooking the fish over medium heat will help to prevent it from overcooking and becoming dry.
  • Use a flavorful white wine: The white wine used in the sauce should be flavorful and complement the delicate flavor of the fish. A dry white wine, such as Sauvignon Blanc or Pinot Grigio, is a good choice.
  • Don't boil the sauce: When making the sauce, be careful not to let it boil. Boiling will cause the sauce to lose its delicate flavor.

Conclusion:

Provençal sauce is a flavorful and versatile sauce that can be used to enhance the flavor of a variety of dishes. It is especially well-suited for delicate fish, such as Dover sole. When making Provençal sauce, be sure to use fresh ingredients and cook the fish over medium heat to prevent it from overcooking. With a little care and attention, you can easily create a delicious and memorable meal.
