Beat together 6 tablespoons unsalted butter (softened) and 1/3 cup sugar in a bowl with an electric mixer until light and fluffy, about 1 minute. Add 1 large egg and 1/2 teaspoon vanilla, then beat until just combined (batter will be very thick). Sift 1 cup cake flour (not self-rising), 1 teaspoon baking powder, and 1/4 teaspoon salt together into egg mixture and stir with a rubber spatula until just combined.
