1 box (15.3 oz) Betty Crocker Fiber One apple cinnamon muffin mix
2 cups canned pumpkin (not pumpkin pie mix)
2 cups water
1 tablespoon vegetable oil
2 eggs
Topping
1 package (3 oz) cream cheese, softened
4 cups powdered sugar
1 teaspoon milk
2 teaspoons vanilla
2 cups chopped walnuts

Steps:

  • Heat oven to 400degreesF. Spray bottom only of 9-inch square pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and eggs just until blended (batter may be lumpy). Spread in pan.
  • Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small bowl, mix cream cheese, powdered sugar, milk and vanilla until smooth; drizzle over bars. Sprinkle with walnuts. For bars, cut into 4 rows by 4 rows.

Steps:

  • For the crust: Preheat oven to 350 F. Line an 8-by-8-inch square pan with enough parchment paper to have 1-inch wings on 2 sides.
  • In a stand mixer fitted with a paddle, combine the butter, sugar, vanilla and salt and beat on medium until pale and fluffy. Reduce to low, add both flours and mix to combine. Press evenly into the pan and bake for 10 minutes. Let cool slightly, about 10 minutes, while you make the filling.
  • For the filling: In a large bowl, toss the apples with the lemon juice. Sprinkle in the flour, sugar, cinnamon, cardamom, nutmeg and salt and toss to combine. Arrange evenly on top of the crust.
  • For the crumble: In a medium bowl, combine the flour, sugar, cinnamon and salt. Add the butter and mix with your hands until crumbly. Sprinkle all over the apples. This is a family favorite that My kids all loved while growing up. My Daughter called me the other night telling me she was making the Pumpkin baers we had as kids for her kids and grands. Just Brought back memories of the good Times we emjoyed as family.. I used to add raisins and Nuts, Today I added Some Fresh apple bits and these were so Moist and so Good You just couldn't have just one bar. . . Very Simple Bars to Make. . . makes a large pan. 10X 13 size.

PUMPKIN APPLE BARS
4 - eggs
1 2/3 cups - sugar
1 Cup - veg. oil ( or 1/2 cup applesauce for 1/2 c of the oil)
1 can - 15 oz can of pumpkin, ( not the pumpkin pie mix)
2 Cups - flour
2 tsp - baking powder
1 tsp - baking soda
2 tsp - cinnamon
1/2 tsp - nutmeg
1 tsp - salt
1 1/2 Cup - fresh apples, peeled, chopped & diced ( fuji or gala)
CREAM CHEESE FROSTING
8 oz - cream cheese, softened
1/2 C - butter, room temperature
2 Cups - powdered sugar
1 Tsp - cinnamon
1 Tsp - vanilla extract

Steps:

  • Preheat Oven @ 350. Grease a 10 X 13 pan Peel Chop and dice apple and set aside.
  • Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.
  • Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt. Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.
  • Add all the Dry ingredients to the Pumpkin mixture, Mix on Low speed til batter is smooth and wel blended. Now you can add the Floured apples and stir well to Blend.
  • Pour your batter evenly into Greased 10X13 pan. Bake @ 350 for 30 min. Let Cool completely, before frosting. Frost with cream Cheese Frosting. Cut into 2 X 3" bars and enjoy. I betcha you can't have just one!!!
  • FROSTING: Mix the Cream Cheese, & Butter in a med Bowl, using an electric Mixer til smooth and fluffy. Add; Pdr Sugar, mix well. STIR in Vanilla, and Cinnamon. Frost your Completely Cooled Bars. . . Now Enjoy
