- Heat oven to 400degreesF. Spray bottom only of 9-inch square pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and eggs just until blended (batter may be lumpy). Spread in pan.

- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch baking dish. Whisk together the flour, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in a bowl.

- Preheat Oven @ 350. Grease a 10 X 13 pan Peel Chop and dice apple and set aside.
- Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.
- Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt. Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.
