Time 1h45m

Yield 18 cookies

Number Of Ingredients 18

2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 teaspoon pumpkin pie spice
2 sticks (1 cup) unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg
1 tablespoon pure vanilla extract
2 tablespoons unsalted butter
3 tablespoons roughly chopped pecans
2 tablespoons light brown sugar
2 tablespoons rolled oats
1/4 teaspoon pumpkin pie spice
1/2 cup confectioners' sugar
1/4 cup pure pumpkin puree
3 ounces cream cheese
1/2 teaspoon pure vanilla extract
1/4 teaspoon fine salt

Steps:

  • For the cookies: Whisk the flour, baking powder, salt and 1/2 teaspoon of the pumpkin pie spice in a medium bowl. Beat the butter and 1/2 cup of the granulated sugar in a stand mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg until combined. Add the vanilla. Reduce the mixer speed to low and beat in the flour mixture until the dough comes together.
  • Mix the remaining 1/4 teaspoon pumpkin pie spice and 1/4 cup granulated sugar in a shallow bowl or plate. Roll the dough into 1 1/2-inch balls (each ball should be a heaping tablespoon; you should have about 18 balls), then roll in the spiced sugar mixture. Divide the dough balls between 2 baking sheets, spacing them about 2 inches apart. Use the handle of a wooden spoon to indent the centers of each dough ball, pinching together any large cracks that form (a few small cracks are fine). Refrigerate until firm, 20 to 30 minutes.
  • Position oven racks in the upper and lower thirds of the oven and preheat to 375 degrees F.
  • Bake until the cookies just begin to warm through, about 6 minutes. Remove the baking sheets from the oven and use the handle of a wooden spoon to indent the centers just a little more. Return them to the oven, rotating the baking sheets from top to bottom and front to back, and bake until the cookies are set and slightly browned on the bottom, an additional 10 to 12 minutes. Transfer the cookies to a wire rack to cool completely, about 30 minutes.
  • For the pecan crumble: Meanwhile, microwave the butter in a small microwave-safe bowl until melted, about 1 minute. Stir in the pecans, brown sugar, oats and pumpkin pie spice. Microwave until the sugar is dissolved, about 1 minute. Let cool in the bowl until the crumble is crunchy, about 30 minutes.
  • For the pumpkin pie filling: Whisk the confectioners' sugar, pumpkin puree, cream cheese, vanilla extract and fine salt in a small bowl until smooth.
  • Assemble the cookies: Once the cookies are cool, spoon 1 to 2 teaspoons of filling into the center of each cookie and smooth the top if needed. Sprinkle the crumble on top of the filling. Store in an airtight container for up to 3 days.

Pumpkin Gingerbread Cookies With Icing image

from "baking bites" - http://bakingbites.com/2010/12/pumpkin-gingerbread-cookies/ - time does not include chill time of at least 2 hours for the dough, or time for the cookies to cool before icing

Time 55m

Yield 4-5 dozen cookies, 54 serving(s)

Number Of Ingredients 13

2 3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup butter, very soft
1/4 cup molasses
1/4 cup pumpkin puree
1 egg
2 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
2 cups confectioners sugar
2 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, sift together flour, baking powder and salt.
  • In a large bowl, cream together sugar and butter. Beat in molasses, pumpkin puree, egg, spices and vanilla extract until well blended. With the mixer on low speed or by hand, gradually add in the flour mixture, mixing until no flour remains.
  • Divide dough into two pieces. Wrap in plastic wrap and chill for at least 2 hours.
  • Preheat oven to 375°F.
  • Working with 1 piece of dough at a time, roll out to no more than 1/4-inch thick on a lightly floured surface and use a floured cookie cutter to make desired shapes. Transfer cookies to a parchment lined baking sheet. Reroll reaming dough, chilling for a few minutes if it becomes too warm to handle easily. Repeat with second piece of dough. Dough can be rolled out two to three times.
  • Bake for 7-9 minutes at 375F, until the edges are slightly firm to the touch but cookies are not browned (The bottom of the cookies will be light brown). If your cookies are exceptionally large or small, the baking time may need to be adjusted. Cool completely on a wire rack before icing.
  • In a small bowl combine powdered sugar, milk and vanilla. Whisk until very smooth. Icing should be thick and pourable, but not runny (You can always add a bit of extra sugar to thicken it if you add too much). Scrape into piping bag with a fine tip or a ziploc bag with a corner cut off and pipe onto cooled cookies. Allow to set for at least 30 minutes, until firm, before storing cookies in an airtight container.

Tips:

  • Make sure your oven is preheated to the correct temperature before baking the cookies. This will help ensure that they bake evenly.
  • Line your baking sheets with parchment paper or a silicone baking mat. This will prevent the cookies from sticking to the pan and make them easier to remove.
  • Use a cookie scoop to portion the dough. This will help ensure that all of the cookies are the same size and shape.
  • Bake the cookies until they are just set around the edges. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before filling them with the pumpkin butter. This will help prevent the filling from melting and running out of the cookies.

Whether you like them plain or filled with your favorite jam or jelly, these cookies are sure to be a hit with your family and friends.
