3 tablespoons all-purpose flour
2 tablespoons curry powder
4 cups vegetable broth

½ fresh pumpkin - seeded, peeled, and cut into chunks
1 cup vegetable stock
water as needed
1 (8 ounce) carton sour cream
1 tablespoon butter, softened
1 tablespoon green curry paste

1 clove garlic, minced

Steps:

  • Put pumpkin in a saucepan. Pour vegetable stock over the pumpkin and add enough water so the pumpkin is completely covered; bring to a boil and cook until pumpkin is tender, about 20 minutes.
  • Drain pumpkin, reserving liquid, and transfer pumpkin to a large bowl. Mash pumpkin with a potato masher until smooth. Transfer mashed pumpkin to a saucepan.

1.5kg pumpkin or squash, peeled and roughly chopped
4 tsp sunflower oil
1 onion, sliced
1 tbsp grated ginger
1 lemongrass, bashed a little
3-4 tbsp Thai red curry paste
400ml can coconut milk
850ml vegetable stock
lime juice and sugar, for seasoning
1 red chilli, sliced, to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the pumpkin or squash in a roasting tin with half the oil and seasoning, then roast for 30 mins until golden and tender.
  • Meanwhile, put the remaining oil in a pan with the onion, ginger and lemongrass. Gently cook for 8-10 mins until softened. Stir in the curry paste for 1 min, followed by the roasted pumpkin, all but 3 tbsp of the coconut milk and the stock. Bring to a simmer, cook for 5 mins, then fish out the lemongrass. Cool for a few mins, then whizz until smooth with a hand blender, or in a large blender in batches. Return to the pan to heat through, seasoning with salt, pepper, lime juice and sugar, if it needs it. Serve drizzled with the remaining coconut milk and scattered with chilli, if you like.

1 small onion, chopped

1 garlic clove, minced
2 cups canned pumpkin
1 1/2 cups light coconut milk
1 1/2 cups skim milk

1 pinch dried thyme
1 teaspoon lime juice

2 ounce Heavy cream
6 c. Pumpkin puree, (recipe below)
1 Tbsp. Plus 1 tsp. extra virgin extra virgin olive oil
1/2 tsp Green curry paste
5 slc White bread, crust removed
1 x Chinese pumpkin, (6 lb.)
1 1/2 c. Water
2 Tbsp. Butter

Steps:

  • Simmer stock, puree and heavy cream till desired consistency. Bake diced bread on a sheet pan in the oven at 450 degrees till browned. Meanwhile, mix extra virgin olive oil and green curry in a bowl. Remove bread from oven and place in the bowl, covering it with curry. Place bread crumbs back into oven till crisp. Variations on soup: Lemon grass added to stock while heating. PUMPKIN PUREE:Remove skin from pumpkin and chop the meat into small pcs. Heat butter in a saute/fry pan and add in the pumpkin. Add in the water and simmer covered for about 20 min or possibly till the pumpkin is tender. Remove the pumpkin meat and mash it by hand or possibly in a food processor. Yield: 9 c.

1 large onion, chopped
2 tablespoons olive oil
2 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth, divided
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon pepper
2 cups 2% milk
1 can (15 ounces) solid-pack pumpkin
1 cup half-and-half cream
CROUTONS:
3 cups cubed French bread
3 tablespoons butter, melted
1 teaspoon brown sugar
1/8 teaspoon ground cinnamon

2 tablespoons butter or 2 tablespoons margarine
1 large onion, chopped (1 cup)
2 (13 3/4 ounce) cans chicken broth
1 (1 lb) can solid-pack pumpkin (2 cups)
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon pepper
2 cups milk
1 cup heavy cream
3 tablespoons softened butter or 3 tablespoons margarine
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
4 slices whole grain bread

Steps:

  • Heat butter in large saucepan or dutch oven; add onion; saute until tender but not brown, about 10 minutes.
