Quick and easy muffins from a cake mix base.

Categories     Muffins

Number Of Ingredients 5

1 (18.25) pkg spice or carrot cake mix
1 (15oz) can(s) libby's 100 % pure pumpkin
3 eggs
1/3 c water
2/3 c raisins

Steps:

  • 1. Preheat oven to 350 degrees. Grease or paper-line 24 muffin cups
  • 2. Combine cake mix, pumpkin, eggs and water in a large mixing bowl until moistened. Beat on low speed for 30 seconds. Scrape the bowl and beat on medium speed for 2 minutes. Stir in raisins. Spoon batter into prepared muffin cups, filling 2/3 full.
  • 3. Bake for 18-22 minutes or until toothpick comes out clean.

Tips:

  • Use fresh pumpkin puree. Fresh pumpkin puree has a more intense flavor than canned pumpkin puree, and it will make your muffins more moist and delicious.
  • Don't overmix the batter. Overmixing the batter will make your muffins tough and dry. Mix only until the ingredients are just combined.
  • Use a muffin pan that is at least 2 inches deep. This will help to ensure that your muffins bake evenly.
  • Fill the muffin cups about 2/3 full. This will help to prevent the muffins from overflowing.
  • Bake the muffins at a high temperature for the first 10 minutes. This will help to give them a nice rise.
  • Let the muffins cool completely before frosting them. This will help to prevent the frosting from melting.

Conclusion:

These pumpkin spice muffins are the perfect fall treat. They are moist, flavorful, and perfectly spiced. They are also easy to make, and they can be made ahead of time. Whether you are looking for a quick and easy breakfast or a delicious snack, these pumpkin spice muffins are sure to hit the spot.
