1 cup sugar
2 tsp pumpkin pie spice ((see recipe))
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
2 eggs ((beaten, room temperature))
1 cup pumpkin puree
1/2 cup butter ((melted and cooled))
1 tsp vanilla extract
1/2 cup zucchini ((grated))

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a muffin tin by lining with paper muffin liners or lightly coating with non-stick cooking spray.

1 cup canned pumpkin
1 cup butter, melted
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup shredded zucchini
1 cup chopped walnuts

3 eggs, beaten
1 cup sugar (or lessen to 3/4)
1 cup pumpkin pie filling
1/2 cup melted butter
1 tablespoon vanilla extract
1/2 teaspoon lemon extract or 1 teaspoon lemon zest
1/2 cup applesauce
1 cup crushed pineapple
2 1/2 cups flour (3 if zucchini is very wet)
1 cup oats
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt (optional)
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 dash pumpkin spice
2 cups shredded zucchini
1 cup raisins
