This is my kind of chili - thick and hearty. Try sweet potato or butternut squash instead of pumpkin, and serve over quinoa, barley, brown rice or farro. -Jean Ecos, Hartland, WI

Pumpkin, Sweet Potato, & Black Bean Chili Recipe - (4.6/5) image

Provided by laurenzembron

Number Of Ingredients 15

1 tsp extra virgin olive oil
1 cup finely chopped yellow or white onion
2 serrano chile peppers, minced (you can seed both, one, or neither depending on your heat preference)
2 large cloves garlic, minced
2 tsp chili powder (ancho or chipotle would work nicely, as well)
2 tsp ground cumin
1/2 tsp cinnamon
1/8 tsp cayenne pepper, or more to taste
1 cup unseasoned tomato sauce/puree
1 cup pumpkin puree (I used homemade, but canned would be fine)
1 cup pumpkin beer (use whatever brew you'd like; for me, it doesn't get any better than Southern Tier Pumking Imperial Pumpkin Ale)
1 cup water
Kosher salt and freshly ground black pepper, to taste
1 (15 oz) can low-sodium black beans, rinsed and drained
2 cups peeled and cubed sweet potatoes

Steps:

  • Heat olive oil in a large dutch oven or heavy-bottomed pot over medium heat. Add onion and cook, stirring frequently, until soft and translucent, about 5 minutes. Add in the serrano and garlic, and cook, stirring frequently, until soft and fragrant, about 1 minute. Stir in the spices and cook for 1 minute. Add in the tomato sauce, pumpkin puree, beer, and water. Season to taste with salt and pepper. Bring mixture to a boil, reduce heat to low, add the beans and sweet potato, and simmer until the sweet potatoes are tender, the chili has thickened, and the flavors have melded, at least 1 hour.

BLACK BEAN 'N' PUMPKIN CHILI

Black Bean 'n' Pumpkin Chili image

My family is crazy about this slow cooker chili because it uses ingredients you don't usually find in chili. Believe it or not, I discovered that pumpkin is what makes the dish so special. Cook up a big batch and freeze some for later; it tastes even better reheated. -Deborah Vliet, Holland, Michigan

Tips:

  • Prep your ingredients beforehand: Dice the vegetables, mince the garlic, and drain and rinse the black beans before you start cooking. This will make the cooking process go much faster and smoother.
  • Use a variety of vegetables: This recipe calls for pumpkin, sweet potatoes, and black beans, but you can also add other vegetables that you like, such as carrots, celery, or corn.
  • Don't overcook the vegetables: The vegetables should be tender but still have a slight bite to them. If you overcook them, they will become mushy and lose their flavor.
  • Use a good quality chili powder: The chili powder is one of the key ingredients in this recipe, so make sure you use a good quality one. Look for a chili powder that is made with a variety of chili peppers and has a deep, smoky flavor.
  • Season to taste: Be sure to taste the chili before serving and adjust the seasonings as needed. You may want to add more chili powder, cumin, or salt and pepper.

Conclusion:

This pumpkin sweet potato black bean chili is a delicious and hearty meal that is perfect for a cold fall or winter day. It is packed with vegetables, protein, and fiber, and it is also relatively easy to make. So next time you are looking for a healthy and satisfying meal, give this chili a try.
