Time 2h10m

Yield 8 servings

Number Of Ingredients 6

1 whole head garlic
6 tablespoons extra-virgin olive oil
1 pound dried white beans, soaked overnight
Coarse salt and freshly ground pepper
2 tablespoons fresh thyme leaves
2 sprigs of thyme to garnish

Steps:

  • Preheat oven to 350 degrees. Cut off the top of the head of the garlic and pull away any loose papery skin. Put the garlic on a piece of foil and sprinkle it with two tablespoons olive oil and wrap it up. Bake it for one hour, or until the cloves are tender.
  • Meanwhile, simmer the beans in water to cover for about one hour, or until they are tender. Halfway through cooking time, season them with salt and pepper.
  • Put the beans in a food processor. Squeeze six cloves of garlic out of their skins and add them, along with the olive oil (reserve the rest of the garlic for using in salad dressings or on vegetables like baked tomatoes). Process the beans until they are smooth, adding more oil if needed. Correct seasoning and add more garlic if it seems needed. Stir in the thyme leaves and serve in a bowl garnished with sprigs of thyme.

Tips:

  • Choose the right garlic: Fresh, plump garlic cloves are best for pureeing. Avoid cloves that are bruised or have green sprouts.
  • Roast the garlic: Roasting garlic mellows its flavor and makes it easier to puree. To roast garlic, cut off the top of the head and drizzle with olive oil. Wrap the head in foil and bake at 400 degrees Fahrenheit for 45 minutes to an hour, or until the cloves are soft and caramelized.
  • Use a food processor or blender: A food processor or blender is the easiest way to puree garlic. Add the peeled garlic cloves to the food processor or blender and pulse until they are finely chopped. You can also use a mortar and pestle to puree garlic, but this method takes more time and effort.
  • Add liquid: If you are using a food processor or blender, you may need to add a little bit of liquid to help the garlic puree. Water, olive oil, or broth are all good options.
  • Season to taste: Once the garlic is pureed, season it to taste with salt, pepper, and other herbs and spices. You can also add a bit of lemon juice or vinegar to brighten the flavor.

Conclusion:

Pureed garlic is a versatile ingredient that can be used in a variety of dishes. It can be added to soups, stews, sauces, and marinades. It can also be used as a spread or dip. Pureed garlic is a great way to add flavor and complexity to your dishes. With its many uses and health benefits, it's a must-have ingredient in any kitchen.
